In a large bowl, stir together cream, milk, vanilla, mint extract, sugar, salt, and food coloring (if using) until sugar dissolves.


Pour into ice cream machine. Freeze according to manufacturer's instructions.


Once frozen, remove from container. Stir in chocolate chunks. Freeze until set.
