New York Style Cheesecake

01 Do not leave large chunks of graham cracker when grinding.

02 Be sure to mix the cream cheese and eggs VERY well.

03 When the cheesecake is baking, DO NOT open the oven door.

04 Once the cheesecake is done, let it cool completely in the water bath.

Process graham crackers until finely ground. Mix in sugar. Add melted butter and pulse to combine.


Turn out into prepared pan. Press evenly on bottom and sides of pan. Set aside.


With an electric mixer, beat cream cheese until smooth and creamy, 2-3 minutes.


With the mixer running, stream in sugar.


Add eggs, one at a time, beating well after each addition. Stir in lemon juice, lemon zest, and vanilla.


Pour into prepared crust.


Bake in a water bath for 40-45 minutes, until just set. Let cool. Refrigerate overnight.


Remove from pan and serve!
