01 Use canned pumpkin puree.
02 Lightly grease your hands before shaping the dough.
03 Toast the walnuts for extra flavor.
04 The white chocolate may need vegetable oil added to it to thin it.
In a medium bowl, combine flour, pumpkin pie spice, baking soda, and salt. Set aside.
With an electric mixer, beat butter and sugar.
Mix in eggs and vanilla.
Beat in pumpkin.
Stir in flour mixture.
Form into a log. Place on prepared pan. Flatten log to 1 inch thick.
Bake at 350 for 35 minutes, or until firm.
Slice biscotti horizontally into 1 inch slices.
Bake at 250 for an additional 25 minutes per side, until crisp.
Melt white chocolate.
Top with chopped walnuts.
