These Layered Pumpkin Pie Maple Cheesecake Bars with Cinnamon Streusel are rich, creamy, decadent, and seriously SO. GOOD.

Graham Crackers Granulated Sugar Salted Butter Cream Cheese Maple Syrup Large Eggs Heavy Cream Vanilla Extract Pumpkin Purée Evaporated Milk Brown Sugar Pumpkin Pie Spice Ground Cinnamon All-Purpose Flour


Combine graham crackers, sugar, and melted butter. Stir. Press into bottom of pan. Bake for 15 minutes.


Beat cream cheese until smooth. Beat in eggs. Stir in maple syrup, brown sugar, salt, cream, and vanilla. Pour into pan and bake for 30 minutes.


Whisk all pumpkin pie ingredients together. Gently ladle on top of cheesecake. Bake for 30 minutes.


Whisk together sugars, pumpkin pie spice, and flour. Cut in butter with a pastry knife or fork.


Sprinkle on top of pie. Bake for an additional 25 minutes, until completely set. Allow to cool completely before refrigerating.
