Ingredients
1cupdried orzo
¼cupolive oil
¼cuppinenuts
¼cupsun-dried tomatoeschopped
2teaspoonsminced garlic
12ouncesmedium shrimp
¼cupfresh lemon juice
4 cupsbaby spinach
Instructions
Cook orzo according to package directions. Set aside.
In a large pan over medium heat, add olive oil.
