The perfect cookie to enjoy spring and summer! Every bite of one of these super simple Slice and Bake Key Lime Shortbread Cookies is buttery, perfectly sweet, and extra citrusy.
Cookies 1 cup unsalted butter room temperature ½ cup granulated sugar 2 cups all purpose flour ¾ teaspoon salt 2½ teaspoons key lime zest Icing 2 cups powdered sugar sifted 5 Tablespoons key lime juice
Cookies Beat butter and sugar with an electric mixer until creamy.
Mix in flour, salt, and lime zest.
Turn out onto a piece of parchment paper.
Roll into a log 12 inches long.
Roll up in the parchment paper.
Freeze for 30 minutes.
Heat oven to 375 °F .
Line 2 sheet pans with parchment paper. Set aside.
Remove cookie dough from freezer.
Slice into ¼ inch slices.
Place on prepared sheet pans.
Bake for 12 minutes, rotating halfway through, or until just starting to color around the edges.
Cool on pans.
