No Cook Mint Chocolate Chip Ice Cream

Enjoy warm days with this sweet and creamy Mint Chocolate Chip Ice Cream. Only 8 ingredients, no eggs, and SO simple to make! Every bite is truly oh-so delicious.
2¼ cups heavy cream ¾ cup whole milk 1½ teaspoons vanilla extract ⅛ teaspoon mint extract ½ cup granulated sugar 1/16 teaspoon salt ⅛ teaspoon green food coloring optional 1½ cups chocolate chunks
In a large bowl, stir together cream, milk, vanilla, mint extract, sugar, salt, and food coloring (if using) until sugar dissolves.
Pour into ice cream machine.
Freeze according to manufacturer's instructions.
Once frozen, remove from container.
Stir in chocolate chunks.
Serve immediately for soft serve or freeze overnight for scoopable consistency.
Make sure the sugar is completely dissolved before adding it to the ice cream machine.
This recipe is naturally gluten free and vegetarian!
Make sure your milks are cold before starting.
You can enjoy this ice cream as a soft-serve.
