Creamy, minty, and so delicious, No Cook Mint Chocolate Chocolate Chip Ice Cream. It’s everyone’s favorite ice cream, but now made at home! The base is made with heavy cream, whole milk, salt, sugar, a splash of vanilla, mint extract, green food coloring, and LOTS of chocolate chunks. Seriously, it’s easy and so good. This ice cream takes only minutes to prepare, requires zero eggs, and comes out so rich and creamy every time. You simply can’t beat a scoop (or two!) of this mint chip ice cream on a hot day. SO. GOOD.

About The Recipe

The weather has been consistently in the mid 70’s this week and I am craving some ICE CREAM!

Seriously, once the weather gets above 60 degrees, I say it’s totally okay to indulge in some ice cream.

Though, today’s ice cream is not just any ordinary ice cream. Oh, no. This is one of my absolute favorites from childhood!

Mint chip ice cream was my go-to as a kid.

Any time my mom took me and my brother for ice cream, I would always order some. When we got older and started to make ice cream more often, I would always make some. I was obsessed!

Though, I will admit that it has been a long time since I’ve actually enjoyed some. So, I thought that there was no better time to share this classic treat.

It was so much fun to make! But, getting that mint level just right took quite a bit of testing. We wanted something lightly sweet, creamy, and minty without tasting toothpaste-y.

In the end, we finally achieved the easiest, but most delicious mint chocolate chip ice cream!

Every bite has just the right amount of mint, while being perfectly balanced between sweetness and rich creaminess.

Making this ice cream has really reinvigorated my childhood love of this flavor and I hope you all love it just as much!

  • Heavy Cream – The secret to a rich and smooth ice cream! Since heavy cream has a higher fat content, it helps keep this ice cream silky smooth aka having less ice crystals form.
  • Whole Milk – We like to always use to higher fat content milks in our ice creams to ensure a silky smooth texture!
  • Vanilla Extract – A splash helps counteract some of the mint flavor and keeps it from being overwhelming.
  • Mint Extract – The main flavor of this ice cream! Always be careful when measuring mint extract, as adding too much may make this ice cream too strong and unpleasant to eat.
  • Granulated Sugar – Adds just the right amount of sweetness to this ice cream!
  • Salt – A pinch of salt to enhance the flavor, while cutting the sweetness slightly.
  • Green Food Coloring – The food coloring is optional, but adding it gives this ice cream it’s iconic color.
  • Chocolate Chunks – We opted for chunks in this recipe rather than traditional chips, to give every bite a big chunk of chocolate!

How To Make Mint Chip Ice Cream

Step 1: Make ice cream base

In a large bowl, stir together cream, milk, vanilla, mint extract, sugar, salt, and food coloring (if using) until sugar dissolves.

Step 2: Freeze

Pour into ice cream machine. Freeze according to manufacturer’s instructions.

Step 3: Add

Once frozen, remove from container. Stir in chocolate chunks.

Step 4: Freeze

Serve immediately for soft serve or freeze overnight for scoopable consistency!

How To Store

This recipe needs to be kept in a freezer safe, airtight container. It can last up to 2 months in the freezer.

5 Ways You Can Turn This Gingerbread Ice Cream Into A New Dessert
