Streusel

  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon apple pie spice
  • 1 pinch salt
  • 5 Tablespoons all purpose flour
  • 3 Tablespoons unsalted butter cold, sliced

Instructions

Graham Cracker Crust

  • Heat oven to 350℉/177℃.
  • Line a 9-inch square pan with parchment paper and spray with cooking spray. Set aside.
  • Combine graham crackers, sugar, and melted butter in a medium bowl.
  • Stir until thoroughly combined.
  • Immediately press into bottom of prepared pan. Pack well.
  • Bake for 15 minutes.
  • Set aside to cool.

Apple Pie Filling

  • Peel, core, and chop apples.
  • Combine apples and the rest of the ingredients in a 6 quart pot.
  • Cook over medium-low heat for 5-10 minutes, stirring occasionally.
  • When apples become slightly tender, turn off heat and allow to cool before use.

Cheesecake

  • Beat cream cheese with an electric mixer fitted with the paddle attachment until smooth.
  • Beat in eggs, one at a time, making sure each is fully incorporated.
  • Stir in apple pie spice, cream, and vanilla.
  • Pour cheesecake mixture on top of prepared crust.
  • Bake the cheesecake for 30 minutes.

Streusel

  • While the cheesecake is baking, whisk sugars, apple pie spice, and flour together.
  • Cut in the butter with a pastry knife or fork. Set aside.

Assembly

  • Gently spoon apple pie filling on top of the cheesecake.
  • Sprinkle streusel over the top of the apple pie filling.
  • Return the cheesecake to the oven.
  • Bake for an additional 30 minutes, until set. (You still want a little bit of wobble.)
  • Remove the cheesecake from the oven and place on a cooling rack to cool completely before refrigerating for 8-12 hours before serving.

Notes

You can use a tart tamper or the bottom of a measuring cup to pack the graham cracker crust.
Do not remove the cheesecake from the pan before refrigerating it.
