Ingredients

  • 4 cups chopped strawberries about 1 1/2 lbs whole
  • ½ cup granulated sugar
  • 2 Tablespoons lemon juice

Instructions

  • Heat oven to lowest temperature, generally 150℉-180℉/66℃ - 82℃.
  • Line sheet pan with parchment paper. Set aside.
  • Combine all ingredients in a medium saucepan.
  • Cook over medium/medium-low heat, stirring as needed to prevent burning until thick and jammy, about 20-25 minutes.
  • Cool slightly, about 10 minutes.
  • Pour into blender.
  • Purée.
  • Pour onto prepared pan.
  • Use an offset spatula to spread evenly and thinly (about 1/16-inch).
  • Bake for 4-8 hours, checking it every 30 minutes after 4 hours, until no longer sticky.
  • Use a pizza cutter or scissors to cut into strips.
