Easy Strawberry Fruit Roll Ups (Homemade Fruit Leather!)

These Strawberry Fruit Roll Ups are the perfect homemade treat! Made with fresh strawberries and free from artificial additives, they’re a guilt-free snack for kids and adults alike. Plus, they’re naturally vegan and gluten-free, making them a delicious choice for everyone!

We love sharing recipes for some of our favorite nostalgic treats! Whether it’s a classic nutri-grain bar or an elevated version of rice krispie treats, we love it all.

Recently, we’ve been making a lot more snacks from our childhood (think, muddy buddies or fig newtons). With this in mind and plenty of strawberries leftover from our donut muffins, we knew we had to finally share our recipe for fruit roll-ups (or fruit leather)!

What Makes These Better Than Store-Bought?

I’ll admit, store-bought has the convenience factor in its favor…but that’s about it. Homemade really is in a league of its own! Here are just a few of the reasons that this recipe will become your new go-to:

  • Free from the top 9 allergens. With only three ingredients, this recipe is naturally gluten-free, vegan, nut-free, soy-free, and corn-free!
  • Easy to prep and make. This recipe requires MINIMAL hands-on time.
  • Made with real fruit. Fresh strawberries make these roll-ups simply irresistible.
  • No artificial flavors or colors. You won’t find high-fructose corn syrup, red food coloring, or extracts in this recipe.
  • Loved by kids and adults. Sweet without being too sweet, full of flavor, and something everyone will love.

You Only Need 3 Ingredients!

Strawberries, sugar, and lemon juice make up the entire recipe list! It’s minimal, easy, and delicious. Bonus? It really requires NO effort to make.

Simply combine all ingredients in a medium saucepan and cook until thickened. This can be anywhere from 10-30 minutes, depending on how your stovetop cooks. Once it’s at a jam-like consistency, allow it to cool for about 10 minutes. Then, puree in a blender until smooth and no chunks of berry remain (it should look like the second picture!).

Thinly spread the mixture in a parchment lined sheet pan. Bake at the lowest temperature your oven will go (no dehydrator needed). This is what creates the classic fruit leather texture we all know and love! It can take anywhere from 4-8 hours, depending on how low your oven temperature can go.

Once your fruit is fully dehydrated and cool to the touch, it’s time to start cutting! I found it’s easiest to use a clean pair of scissors, as a knife couldn’t quite cut all the way through.

Now, it’s time to roll them up! I cut a few strips from parchment paper to do this. You could use wax paper or any food-safe paper you wish.

Easy Strawberry Fruit Roll Ups (Homemade Fruit Leather!)

Ditch the store-bought stuff! Learn how to make your own strawberry fruit roll-ups at home. This simple recipe uses fresh ingredients and is perfect for kids and adults alike!
Prep Time: 25 minutes
Cook Time: 8 hours
Total Time: 8 hours 25 minutes
Servings: 8 rollups

Ingredients
 

  • 4 cups chopped strawberries, about 1 1/2 lbs whole
  • ½ cup granulated sugar
  • 2 Tablespoons lemon juice

Instructions
 

  • Heat oven to lowest temperature, generally 150℉-180℉/66℃ – 82℃.
  • Line sheet pan with parchment paper. Set aside.
  • Combine all ingredients in a medium saucepan.
  • Cook over medium/medium-low heat, stirring as needed to prevent burning until thick and jammy, about 20-25 minutes.
  • Cool slightly, about 10 minutes.
  • Pour into blender.
  • Purée.
  • Pour onto prepared pan.
  • Use an offset spatula to spread evenly and thinly (about 1/16-inch).
  • Bake for 4-8 hours, checking it every 30 minutes after 4 hours, until no longer sticky.
  • Use a pizza cutter or scissors to cut into strips.

How to Store Your Strawberry Fruit Roll-Ups

Store at Room Temperature:
Your homemade strawberry fruit roll-ups can be stored at room temperature in an airtight container. The lemon juice acts as a natural preservative, helping to extend their shelf life. For optimal freshness, be sure to enjoy them within 2 weeks.

Tips For Making The Best Fruit Roll-Ups

  • Fruit Selection: Ripe, juicy strawberries will yield the best flavor. You can also experiment with different fruit combinations for a variety of flavors!
  • Sweetness Adjustment: If your fruit is particularly sweet, you may omit the sugar altogether.
  • Puree Consistency: Aim for a smooth, thick puree. If the puree is too watery, the drying time will be longer.
  • Even Spreading: For consistent thickness and drying time, spread the puree evenly on your baking sheet.
  • Drying Time: Drying time can vary depending on the thickness of the fruit layer and the temperature of your oven. After 4 hours, check every 30 minutes to prevent over-drying.
  • Cooling: Allow the fruit roll-ups to cool completely before cutting to prevent tearing!
