Funfetti Cookies

These extra sweet and oh so delicious Funfetti Cookies are the perfect cookie to bake for any and all occasions! Every bite is soft, with the edges being just barely crisp, full of sweetness, and SO. GOOD. The perfect cookie!

Ingredients

  • 2 cups all purpose flour
  • ½ teaspoon baking soda
  • teaspoon salt
  • ¾ cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup sprinkles

Instructions

  • Heat oven to 375°F/190℃.
  • Line 2 sheet pans with parchment paper. Set aside.
  • In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  • Beat butter and sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  • Beat in egg and vanilla until smooth.
  • Stir in flour mixture.
  • Stir in sprinkles.
  • Use a medium cookie scoop to portion dough onto prepared pans.
  • Bake for 8-10 minutes, or until done.
  • Allow to cool before removing from pans.

Notes

  • Make sure all of your ingredients are room temperature!
  • Room temperature is about 70℉/21℃.
  • Be careful not to over mix the cookie dough!
  • If baking multiple pans at a time, be sure to check on the cookies at about 8 minutes into the bake time.
  • Don't forget to line your sheet pans.
  • It's best to use a cookie scoop to ensure all cookies are the same size.
  • The cookie dough can be frozen and baked at a later date!
