Sweet, full of color, and oh so cute Funfetti Cookies! The classic cookie we all know and love, but now made even better. An easy to make sugar cookie, with a splash of vanilla, and, of course, plenty of rainbow sprinkles! These cookies are rich in buttery sweet flavor and sure to be everyone’s new favorite. They’re the perfect cookie to make on repeat all year long, but especially during the summer months. Every bite is soft and chewy, while being perfectly sweet and full of vanilla flavor. SO. GOOD.
About The Recipe
These cookies literally put the “fun” in funfetti! I mean, okay, sprinkles DO get everywhere, but there is nothing better than a cookie full of rainbow sprinkles, you know? They’re bright, colorful, extra sweet, and SO delicious.
I am 100% a chocolate chip cookie lover. Any version. From the classic to our s’mores cookies. A cookie with chocolate is always a good idea, but I will be totally honest, these sweet sugar cookies might just be in my top 3 favorite cookies right now!
My mom and I, out of all the things we bake, cookies tend to be where we struggle most. It’s allllll about those ratios, creaming the butter and sugar, etc. There’s so many variables with cookies that they often take quite a few bakes to get right.
And with these particular cookies, we knew what we wanted. A simple drop cookie with just that right amount of spread.
Our first attempt with this was, while delicious, definitely more of a slice-an- bake style. We added some milk, an extra egg, extra sprinkles, anything to try and recover that dough. It just was not having it. It went from stiff, perfect, non-spreading cookie to all spread. All the time.
So, we tried again. Adjusted ratios and mixing times.
It worked! We had exactly what we were looking for. Crispy, chewy, sweet, and lots of sprinkles. Everyone we know loved them. While they’re really super sweet, there’s just something so nostalgic and addicting about them.
Honestly, I can’t wait to bake another batch! They’re truly just so freaking good.

Beat in egg and vanilla until smooth.
Stir in the flour mixture.
Mix in sprinkles.
Step 2: Scoop and bake
Using a medium cookie scoop, portion dough onto prepared pans. About 12 cookies per pan. Bake for 8-10 minutes, or until done.

How To Store
The best part about these cookies? They can be frozen for up to 3 months! Oh, yes, that’s right. After baking and cooling, you can place the baked cookies in an airtight freezer safe zip top bag and put in the freezer.
Though, if you’d like fresh baked cookies, you can actually freeze the cookie dough itself! Follow the directions all the way to portioning out the dough. From there, place a few inches apart on a lined sheet pan and place in the freezer for 1-2 hours, or until the cookie dough is frozen solid. From there, place the frozen cookie dough balls in a zip top bag and keep in the freezer for 1-2 months.
You can also keep these cookies in an airtight container or zip top bag on the counter for about a week!
