Mixed Greens Steak Salad with Red Wine Vinaigrette

Definitely not your ordinary steak salad! Light, filling, tangy, and SO GOOD. This Mixed Greens Steak Salad with Red Wine Vinaigrette is the perfect dinner for any day of the week!

Ingredients

Steak Salad

  • 2 steaks of choice grilled and sliced
  • 4 cups mixed lettuce
  • ¼ cup fresh corn
  • ½ cup sliced baby cucumber
  • ½ cup julienned carrots
  • ½ cup sliced tomatoes
  • 1 avocado sliced
  • ¼ cup goat cheese crumbles

Red Wine Vinaigrette

  • ¼ red wine vinegar
  • ½ cup olive oil

Instructions

  • In a small jar or bowl, combine the red wine vinegar and olive oil.
  • Mix until well combined. Set aside.
  • Chop and slice all ingredients.
  • Combine salad ingredients in a large bowl and gently toss.
  • Drizzle with desired amount of vinaigrette and serve.

Notes

    • Make sure to use fresh vegetables!
    • We used lettuce, tomatoes, and cucumbers we grew in our garden, but feel free to use store-bought.
    • The carrots don't have to be julienned, you can just chop them.
    • This salad stores really well for lunch the next day.
