Ingredients

Blondies

  • ¾ cup unsalted butter melted
  • cups brown sugar
  • 3 large eggs room temperature
  • 1 Tablespoon vanilla extract
  • cups all purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • teaspoons pumpkin pie spice
  • 1 cup cinnamon baking chips

Blondies

  • Heat oven to 350℉/177℃.
  • Spray an 8-inch square pan with baking spray. Set aside.
  • In a large bowl, use a rubber spatula to mix butter and sugar.
  • Mix in eggs and vanilla.
  • Add flour, baking powder, salt, and pumpkin pie spice.
  • Stir until blended.
  • Stir in cinnamon chips.
  • Pour into prepared pan.
  • Bake for 45 minutes, or until done.
  • Let cool in pan.
  • Turn out onto serving plate or cooling rack.

Glaze

  • In a medium bowl, whisk together powdered sugar, pumpkin pie spice, and milk.
  • Pour over blondies.
  • Slice and serve.

Notes

  • Make sure to use cinnamon baking chips (typically found by chocolate chips in grocery stores) and NOT cinnamon chips/chunks, as these are inedible chunks of cinnamon bark.
  • Do not beat the batter!
  • Bake times may vary depending on your oven. Use a cake tester to see when these blondies are baked!
  • The glaze is optional, but highly recommended!
