Pumpkin Spice Blondies with Spiced Glaze

If there was a recipe that was perfect for the Fall season, it’s these gooey, sweet, and delicious Pumpkin Spice Blondies with Spiced Glaze. Made with just a handful of kitchen staple ingredients, brown sugar, lots of pumpkin pie spice, and sweet cinnamon chips! Though, the goodness doesn’t stop there. After baking, these gooey blondies are topped with the simplest 3 ingredient pumpkin spice glaze. There is just SO much to love about these pumpkin spice blondies! The best part? They require almost no effort to make, no specialty equipment, and are ready to eat in less than an hour. Every bite is sweet, gooey, heavy on the pumpkin spice, with bits of cinnamon-y goodness, and truly just so good.

About The Recipe

It’s officially our first blondie recipe and I am so excited!!

My mom and I have been wanting to make blondies for almost a year now. We tried last year, but every batch we made just didn’t come out right. So, we pushed back the idea to try again later. And with the holiday’s right around the corner, we couldn’t think of a better time to try again!

Actually, it was our Chocolate Chip Cookie Bars that gave us the confidence and the inspiration to try again!

Our original blondie recipe had quite a few components to it, as it was geared more for Christmas time, so with Fall here, we wanted to scale back and enjoy the simplicity of Fall flavors.

I mean, how much more Fall does it get than Pumpkin Spice?!

Of course, we couldn’t just leave it at that. When we were at the store picking up things for the blog, my mom and I found cinnamon chips.

It seemed like the perfection addition to our blondies.

So, we tossed a handful into our test bake and…they worked! These blondies are chewy, almost gooey, full of delicious pumpkin pie spice flavor, and rich. Every bite just leaves you wanting more!

Then, the super simple glaze on top adds just that little bit of extra goodness.

What are Blondies?

Blondies are a form of cookie bar, similar to a brownie. Traditionally made without flavorings and with the addition of nuts or white chocolate chips. Our version is heavily spiced with pumpkin pie spice and uses cinnamon chips rather than white chocolate chips.

What’s The Difference Between a Blondie and Brownie?

Blondies are often referred to as “blonde brownies”, as they look very similar, and have similar ingredients, but in our testing, we found that brownies and blondies really not that similar. In actuality, it’s almost more like a chocolate chip cookie!

Blondies are made with flour, eggs, melted butter, and lots of brown sugar! Our version does have the addition of pumpkin pie spice, rather than focusing on a strong vanilla flavor, like a traditional blondie.

Brownies are made with cocoa powder (and sometimes melted chocolate!), melted butter, eggs, and granulated sugar. Though, to achieve the gorgeous crinkle-top crust for brownies, you need to beat the eggs and sugar.

With blondies, you shouldn’t beat any of the ingredients, as in our testing, we found that beating the blondies caused them to be greasy and not bake properly.

Ingredients

For The Blondies:

How To Make Pumpkin Spice Blondies

Step 1: Make the batter

In a large bowl, use a rubber spatula to mix butter and sugar.

Mix in eggs and vanilla.

Add flour, baking powder, salt, and pumpkin pie spice. Mix until blended.

Stir in cinnamon chips.

Step 2: Bake

Pour batter into prepared pan and bake for 45 minutes, or until done.

Step 3: Make glaze

Whisk together powdered sugar, pumpkin pie spice, and milk until smooth.

Step 4: Serve

Pour glaze over cooled blondies. Slice and serve!

How To Tell When Blondies Are Perfectly Baked

We found that with this recipe in particular, using a cake tester or tooth pick is the best way to tell when they’re perfectly baked. After inserting the cake tester, it should still be a little damp with maybe one or two crumbs on it.

This means that the blondies are still moist and just baked!

How To Store

Once these blondies have cooled, you can store them in an airtight container or zip top bag at room temperature for about 1 day (they are very moist!). You can refrigerate them for about 3-5 days. Though, in our opinion, the best way to store these blondies is in the freezer! Place the blondies in a freezer safe zip top bag and freeze for up to 3 months.

Ingredients
 

Blondies

  • ¾ cup unsalted butter, melted
  • cups brown sugar
  • 3 large eggs,, room temperature
  • 1 Tablespoon vanilla extract
  • cups all purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • teaspoons pumpkin pie spice
  • 1 cup cinnamon baking chips

Glaze

Instructions

Blondies

  • Heat oven to 350 °F.
  • Spray an 8-inch square pan with baking spray. Set aside.
  • In a large bowl, use a rubber spatula to mix butter and sugar.
  • Mix in eggs and vanilla.
  • Add flour, baking powder, salt, and pumpkin pie spice.
  • Stir until blended.
  • Stir in cinnamon chips.
  • Pour into prepared pan.
  • Bake for 45 minutes, or until done.
  • Let cool in pan.
  • Turn out onto serving plate or cooling rack.

Glaze

  • In a medium bowl, whisk together powdered sugar, pumpkin pie spice, and milk.
  • Pour over blondies.
  • Slice and serve.
