Quick and Easy Cinnamon Rolls with Cinnamon Icing (No Yeast!)

The quickest and most delicious No Yeast Cinnamon Rolls! They're SO easy to make, very fluffy, tender, full of flavor, and SO. GOOD. There's no better quick cinnamon roll for your holiday baking needs!

Ingredients

Rolls

  • 5 cups all purpose flour
  • 5 Tablespoons granulated sugar
  • Tablespoons baking powder
  • 1⅔ teaspoons salt
  • 2 cups whole milk room temperature
  • ½ cup unsalted butter melted
  • 1 large egg room temperature
  • ½ teaspoon vanilla extract

Filling

  • ¼ cup granulated sugar
  • 1 Tablespoon ground cinnamon
  • 4 Tablespoons salted butter melted

Glaze

  • cup powdered sugar sifted
  • ¼ teaspoon ground cinnamon
  • 1 Tablespoon whole milk
  • teaspoon vanilla extract

Instructions

Filling

  • In a small bowl, combine sugar and cinnamon. Set aside.

Rolls

  • Heat oven to 350℉/177℃.
  • Spray a small sheet pan with cooking spray. Set aside.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In a medium bowl, whisk together milk, butter, egg, and vanilla.
  • Pour over flour mixture.
  • Mix well.
  • Turn out onto a floured surface.
  • Roll into a 12-inch x 18-inch rectangle.
  • Pour melted butter over dough and spread all the way to edges.
  • Sprinkle with cinnamon sugar.
  • Beginning with long end, roll dough jellyroll-style.
  • Using a sharp knife, cut into 1½-inch rolls.
  • Place on prepared pan.
  • Bake for 25-30 minutes, or until done.

Glaze

  • In a small bowl, combine powdered sugar, cinnamon, milk, and vanilla.
  • Beat until smooth.
  • Drizzle over the top of the warm rolls.

Notes

  • Room temperature is about 70℉21℃.
  • Don’t over work the dough! The more you work it, the less tender and fluffy the rolls are going to be.
  • Make sure to use a pan that the rolls fill, but still have room to expand. We found that a quarter sheet pan works perfectly!
  • Some of the cinnamon sugar may fall out when you roll it.
  • Use a ruler to make sure your cinnamon rolls are all the same size when cutting.
