Glazed Pumpkin Pecan Scones

These Glazed Pumpkin Pecan Scones are tender, easy to make, and are the perfect baked Autumn treat for breakfast! SO. GOOD.
Scones
- 1 cup canned pumpkin
- 2 large eggs
- ½ cup heavy cream
- 1 teaspoon vanilla
- 3 cups all purpose flour
- 1 Tablespoon baking powder
- 1 teaspoon salt
- ⅓ cup sugar
- 1 Tablespoon pumpkin pie spice
- ¾ cup unsalted butter
- 1 ½ cups chopped pecans
Glaze
- 1 cup powdered sugar, sifted
- 2 Tablespoons milk
- ½ teaspoon vanilla
Scones
Preheat oven to 375 degrees.
Line 2 baking sheets with parchment paper. Set aside.
In a medium bowl, combine pumpkin, eggs, cream, and vanilla. Mix well. Set aside.
In a large bowl, whisk together flour baking powder, salt, sugar, and pumpkin pie spice.
Grate butter into dry ingredients.
Toss lightly to combine.
Add pecans.
Pour wet ingredients over dry and stir gently to combine.
Divide dough in half.
Working with 1 half at a time, gently form dough into a ball and place on floured surface.
Sprinkle top lightly with flour.
Pat out into an 8" circle that is 1/2" thick.
Using a pizza cutter or sharp knife, cut into 8 wedges.
Place on prepared pan.
Repeat with 2nd half of dough.
Bake for 20 to 25 minutes, until done.
Cool on wire racks.
Glaze
Combine powdered sugar, milk, and vanilla in a small bowl.
Beat until smooth.
Drizzle over cooled scones and top with extra chopped pecans, if desired.
- Make sure the butter is cold before grating.
- Check the expiration date on the baking powder.
- Remember to preheat the oven!
- Don't overwork the dough. Just lightly fold/toss everything together to ensure the flakiest and most tender scones.
- You can cut these scones into any shape you like!
