Hummingbird Cake with Cream Cheese Frosting

The best and easiest hummingbird cake! It's a perfectly tender and moist cake filled with pecans, pineapple, bananas, and cinnamon.
- 3 cups all purpose flour
- 2 cups sugar
- 1 Tablespoon baking powder
- ¾ teaspoon baking soda
- 1 teaspoon salt
- 1 ½ teaspoons ground cinnamon
- 3 large eggs
- 1 ½ cups vegetable oil
- 1 ½ teaspoons vanilla
- 1 cup crushed pineapple
- 4 bananas chopped
- 1 cup pecans chopped
Cream Cheese Frosting:
- 16 ounces cream cheese
- ½ cup butter room temperature
- 4 cups powdered sugar sifted
- 2 teaspoons vanilla
Cake:
Preheat oven to 350 degrees.
Spray 3 9-inch round pans with cooking spray. Set aside.
Whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
In a separate bowl, whisk together eggs, vegetable oil, and vanilla.
Pour wet ingredients into dry ingredients.
Mix only until moistened. Do not beat!
Gently stir in bananas, pineapple, and pecans.
Pour into prepared pans.
Bake for 25 to 30 minutes, until it tests done.
Remove from oven and let cool in pans for about 10 minutes.
Turn out onto cooling rack and allow to finish cooling.
Frosting:
Beat butter and cream cheese at high speed until light and fluffy (about 3-5 minutes).
Add powdered sugar in small amounts, beating well after each addition.
Stir in vanilla.
- Make sure the bananas are overripe. This will provide the best flavor.
- When measuring out the layers, use a scale for the best results.
- Make sure to grease and flour your cake pans.
- Don't over bake the cake. Use a cake tester or a toothpick to see if the cake is done. If it comes away clean, the cake is done.
- Chop a few extra pecans to decorate the cake with.
