Moist, flavorful, and absolutely amazing! These Apple Cinnamon Muffins with Cinnamon Streusel are the best Autumn treat.
Ingredients
3cupsall purpose flour
1Tablespoonbaking powder
1teaspoonbaking soda
¾teaspoonsalt
¼cupsugar
2teaspoonscinnamon
1large Granny Smith applechopped
¾cupapple cinnamon jammy bits
2cupssour cream
1cupapple sauce
¼cupvegetable oil
1large egg
1cupbrown sugarfirmly packed
1cuppecansroughly chopped
2teaspoonscinnamon
1Tablespoonall purpose flour
Instructions
Preheat oven to 375 degrees.
Spray muffin tins with Baker's Joy or line with cupcake papers. Set aside.
Place brown sugar, pecans, cinnamon, and flour into a small bowl and stir until combined. Set aside.
Whisk flour, baking powder, baking soda, salt, sugar, and cinnamon in a large bowl until thoroughly combined.
Combine sour cream, apple sauce, vegetable oil, and egg in a separate bowl.
Pour wet ingredients over dry ingredients and stir until the batter comes together. Add apple and jammy bits. Gently fold until combined. Do not overmix!
Using a large cookie scoop, place your batter into preprepared muffin tins.
Top each muffin with 1 Tablespoon of streusel.
Bake for 18 minutes.
Notes
Make sure your egg is at room temperature.
Once you add the liquid to the dry ingredients, work quickly! The baking soda and powder start rising immediately.
Do not beat the muffin batter! Gently fold in all your ingredients.
Don’t continually open the oven door. The muffins will take longer to cook and may not rise as well as they should.
Do not skip the apple cinnamon jammy bits! They make a huge difference.
