One Pot Vegan Italian Spaghetti Sauce
Simple, comforting, and delicious! This One Pot Vegan Italian Spaghetti Sauce is spicy, warming, and seriously SO GOOD.
Servings: 2 cups
- 14- ounce vegan Italian sausage
- 1-2 Tablespoons olive oil
- 1 cup chopped onion
- ¼ cup chopped celery
- ¼ cup chopped bell pepper
- 1 cup sliced mushrooms
- 1 ½ teaspoons minced garlic
- 2 cups petite diced tomatoes
- 1 cup [tomato sauce]
Remove casings from sausage and sauté in olive oil for 2-3 minutes.
Add onion, celery, bell pepper, mushrooms, and garlic.
Continue to cook for 3-4 minutes, until vegetables begin to soften.
Add tomatoes and tomato sauce.
Reduce heat and cook for 40 minutes, until thickened.
Serve over pasta and enjoy!
