Red Velvet Waffles

Red Velvet Waffles...aka your favorite cake now made into a delicious breakfast treat! Every bite is perfectly sweet, subtly chocolate-y, and just SO. DELICIOUS.

Ingredients

  • 2 cups all purpose flour
  • ¼ cup natural process cocoa powder
  • cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk room temperature
  • 5 large egg yolks room temperature
  • cup unsalted butter melted
  • ½ teaspoon red food coloring
  • 3 large egg whites room temperature

Instructions

  • Heat waffle iron.
  • In a large bowl, sift together flour, cocoa, sugar, baking powder, baking soda, and salt.
  • Add buttermilk, egg yolks, and melted butter.
  • Mix well.
  • Stir in red food coloring.
  • Beat egg whites to medium peaks.
  • Gently fold into batter.
  • Spray heated waffle iron with cooking spray.
  • Ladle batter into waffle iron.
  • Cook according to manufacturers' instructions.

Notes

  • Be careful not to over-beat the egg whites!
  • Don't skip sifting the dry ingredients.
  • The buttermilk and egg yolks need to be room temperature, otherwise the melted butter will solidify when you stir them into the dry ingredients.
  • Room temperature is about 70℉/21℃.
  • To substitute salted butter, reduce salt to ¼ teaspoon.
  • We used a gel food coloring. You may need to use more or less. Adjust as necessary.
  • Be careful folding in the egg whites. You don't want to deflate them!
  • Remember to grease your waffle iron.
  • Don't overfill the waffle iron!
  • Cook times vary on different waffle irons. Always follow the cooking directions that came with your waffle iron!
