Red Velvet Waffles

Red Velvet Waffles...aka your favorite cake now made into a delicious breakfast treat! Every bite is perfectly sweet, subtly chocolate-y, and just SO. DELICIOUS.
2 cups all purpose flour ¼ cup natural process cocoa powder ⅓ cup sugar 2 teaspoons baking powder 1 teaspoon baking soda ½ teaspoon salt 2 cups buttermilk 5 large egg yolks ⅔ cup unsalted butter melted ½ teaspoon red food coloring 3 large egg whites
Heat waffle iron.
In a large bowl, sift together flour, cocoa, sugar, baking powder, baking soda, and salt.
Add buttermilk, egg yolks, and melted butter.
Mix well.
Stir in red food coloring.
Beat egg whites to medium peaks.
Gently fold into batter.
Spray heated waffle iron with cooking spray.
Ladle batter into waffle iron.
Cook according to manufacturers' instructions.
Be careful not to over-beat the egg whites!
Don't skip sifting the dry ingredients.
The buttermilk and egg yolks need to be room temperature, otherwise the melted butter will solidify when you stir them into the dry ingredients.
We used a gel food coloring. You may need to use more or less. Adjust as necessary.
Be careful folding in the egg whites. You don't want to deflate them!
Remember to grease your waffle iron.
Don't overfill the waffle iron!
Cook times vary on your waffle iron. Always follow the cooking directions that came with your waffle iron!
