Welcoming in the first of September with these Cinnamon Streusel Coffee Cake Muffins! Sweet and perfectly moist vanilla muffin, layered with a buttery cinnamon streusel, and topped with even MORE streusel for a seriously delicious and extra special breakfast treat. There’s just so much to love here. The best part? They’re so much easier to make than you might think! Serve warm, right out of the oven, with your favorite mug of coffee. It’s the perfect treat anytime of year, but especially during the holiday’s or on the weekends!

Happy Friday, everyone!

It’s officially September and we thought it would be fun to start the new month with a delicious, super simple breakfast treat that the whole family will love. I mean, what’s better than a mini cake that you can eat for breakfast?!

Coffee cake is something we make all the time in our house. It’s a staple in our kitchen and it’s something we almost always have to serve at breakfast or as a mid-afternoon treat with a cup of coffee.

Though, sometimes having a whole cake is really overwhelming. Especially with all the treats we make! So, we thought it would be fun to try and change things up. Muffins are something we all love and are the perfect size for a quick bite (or three!).

These muffins came out perfectly. Like, just to be honest with you all, we have a lot of muffin recipes on the blog…but these might be our best. They’re SO. GOOD.

Every bite is soft, moist, sweet, with a touch of cinnamon, a hint of vanilla, and a pleasant crunch from the streusel/crumble topping! There’s just something about these muffins that makes the so special.

The best part? They’re pretty simple to make! Just toss together the streusel that’s only a handful of ingredients, mix up the cake batter, layer it in a muffin pan, and BAKE.

Yep. That’s all you need to do to have the best-ever and most delicious muffins for breakfast. Oh, and did I mention they’re ready in just under an hour? So easy and SO delicious!

Is There Coffee In Coffee Cake?

To our surprise, one of our readers left a comment wondering where the the coffee was in our Cinnamon Streusel Coffee Cake. The term, “coffee cake” simply means a cake that is served at breakfast alongside a cup of coffee. So, while there is no coffee in our coffee cake, there is lots of cinnamon and streusel!

Equipment Needed

Ingredients

For The Streusel:

  • Granulated Sugar
  • Ground Cinnamon
  • All-Purpose Flour
  • Salted Butter

For The Muffins:

  • Salted Butter
  • Granulated Sugar
  • Brown Sugar
  • Large Eggs
  • Vanilla Extract
  • All-Purpose Flour
  • Baking Soda
  • Baking Powder
  • Sour Cream

How To Make Coffee Cake Muffins

Step 1: Make the streusel

In a medium bowl, whisk together sugar, cinnamon, and flour.

Use a pastry blender or a fork to cut in butter. Set aside.

Step 2: Make the batter

Whisk together flour, baking soda, and baking powder. Set aside.

With an electric mixer, beat butter, sugar, and brown sugar until light and fluffy, 3-4 minutes.

Beat in eggs, one at a time, mixing thoroughly after each addition. Stir in vanilla.

Stir in the sour cream.

Mix in flour mixture.

Step 3: Layer muffins and bake

Place 1 ½ Tablespoons batter in the bottom of each muffin cup. Top with ½ Tablespoon streusel. Add another 1 ½ Tablespoons batter to each muffin. Top with ½ Tablespoon streusel.

Bake 20-25 minutes, until muffins are lightly browned and test done.

How To Store

Once these muffins have cooled, you cans store them in a zip top bag and keep them in the fridge for 3-5 days. You can also freeze them in a freezer safe zip top bag for 1-2 months! They also reheat well. Just place in the microwave for about 30 seconds – 1 minute in the microwave.

Expert Tips

  • This cake batter is VERY thick! You will need to dampen your finger with water to tap down the batter to spread it into the muffin cup.
  • Use a cookie scoop to help easily portion the batter.
  • Bake times may vary depending on how your oven bakes. You can use a cake tester or a toothpick to see when the muffins are done!
  • If you don’t have cupcake papers, you can grease the muffin pan.
  • Be careful to not add TOO much streusel to the tops of these muffins.

Ingredients
 

Streusel

  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • cup all purpose flour*
  • 6 Tablespoons salted butter, cold

Muffins

  • ¾ cup salted butter, room temperature
  • Tablespoons granulated sugar
  • Tablespoons brown sugar
  • 2 large eggs, room temperature
  • ¾ teaspoon vanilla extract
  • cups all purpose flour*
  • ¾ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¾ cup sour cream

Instructions
 

Streusel

  • In a medium bowl, whisk together sugar, cinnamon, and flour.

Muffins

  • Heat oven to 350°F.
  • Line a muffin tin with baking cups, or spray with baking spray. Set aside.
  • Whisk together flour, baking soda, and baking powder. Set aside.
  • With an electric mixer, beat butter and sugars until light and fluffy, 3-4 minutes.
  • Beat in eggs, one at a time, mixing thoroughly after each addition.
  • Stir in vanilla.
  • Stir in sour cream.
  • Mix in flour mixture.
  • Place 1½ Tablespoons batter in the bottom of each muffin cup.
  • Top with ½ Tablespoon streusel.
  • Add another 1½ Tablespoons batter to each muffin.
  • Top with ½ Tablespoon streusel.
  • Bake 20-25 minutes, until muffins are lightly browned and test done.

Notes + Tips!

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
