You don’t have to be a skilled baker to bake up this seriously easy gingerbread mug cake. This is a deep-dish style cake that is baked in a large mug and only requires a coffee mug, a few holiday pantry staples, and takes pretty much no effort or time to make! What’s even better, you don’t have share! Each mug cake is a single serving. So, it may be the season of sharing, but you’re allowed to indulge for yourself every once in a while. Especially with this deliciously spiced cake! There are subtle hints of vanilla, small chunks of gooey-melted chocolate, and every bite is truly like biting into a freshly baked gingerbread cookie. Enjoy this personal-sized treat warm, right out of the microwave, with an extra helping of Chantilly Cream and chocolate sauce! SO. GOOD.

About The Recipe

I’ll be honest, I have a serious love for mug cakes. I mean, a single serving of cake just for you, made in about 5 minutes, and this mug cake in particular tastes just like a gingerbread cookie!

And, it’s the perfect thing when you just want a quick bite of something sweet with no time to bake an entire batch of cookies.

It’s SO good!

But, I thought I might have been being a little biased because gingerbread is one of my favorite things in the world…so, I asked my family to take a bite. Everyone agreed that it tasted really, really good!

My favorite thing was seeing their reactions to the chocolate chips scattered throughout the mug cake, especially down towards the bottom.

This mug cake is so simple to make. It’s spicy, perfectly sweet, light, fluffy, and it’s guaranteed to be your new go-to when craving something sweet.

Equipment Needed

Ingredients

  • Egg
  • Vegetable Oil
  • Milk
  • Vanilla
  • Molasses
  • All-Purpose Flour
  • Sugar
  • Gingerbread Spice
  • Baking Powder
  • Salt
  • Mini Chocolate Chips

Instructions

In a large mug, combine the egg, vegetable oil, milk, vanilla, and molasses. Whisk until the mixture is thoroughly combined.

Whisk in the flour, sugar, gingerbread spice, baking powder, and salt. Sprinkle the top with chocolate chips.

Place in the microwave for 1 minute and 20 seconds on full power. Each microwave is different, so yours may need to cook a little longer. Keep an eye on it and use a toothpick/cake tester to determine if your cake is done!

Top with chantilly cream and chocolate sauce, dig a spoon in, and enjoy!

How To Store

If there is any of the mug cake left over, cover the top of the mug with plastic wrap, and store overnight in the refrigerator! Just keep in mind that it doesn’t store or reheat as well as a traditional cake!

Expert Tips

  • Check your spices! Your gingerbread spice may be stronger or weaker than ours. Adjust the amount based on your preferences!
  • Every microwave is different. We have a 1250 watt microwave and my mug cakes are perfect at one minute and 20 seconds. Depending on your microwave will depend on the cook time! Adjust as needed.
  • If the mug cake is tough, it’s over cooked.
  • The chocolate chips, chantilly cream, and chocolate sauce are optional, but highly recommended!
  • This recipe does not store very well.

  • 1 large egg

  • ½ teaspoon vanilla
