Asian-Inspired Shrimp Lo Mein

Super simple Asian-Inspired Shrimp Lo Mein… For those nights when you’re craving takeout, but don’t want to order something. Shrimp sautéed in sesame oil, and then tossed with garlic, red pepper flakes ,and some soy sauce. Finally, everything is mixed together with all your favorite vegetables, and some lo mein noodles! Not only are these noodles delicious, but they’re also made easily, using nothing more than pantry ingredients and frozen shrimp, and ready to eat in JUST 45 minutes. It might actually be faster than ordering your favorite take out. Oh, and did I mention that these delicious noodles can easily be made vegan? Yep, this delicious lo mein is absolutely the perfect weeknight dinner for all!

About The Recipe

I’ll be honest, lo mein of any kind was a favorite of mine growing up! I loved all the noodles and veggies. It definitely was my go-to order whenever we went somewhere…and, even as I’ve gotten older and tried new dishes, it’s always nice to go back and enjoy just a really large bowl of noodles, you know?

But most of the time, we really don’t want to order takeout. It takes way more than an hour to get something delivered where we live (we live quite a bit aways from the closest asian restaurant)! So, we decided to make this super simple 45 minute shrimp lo mein. It’s definitely an Americanized version and inspired by all the wonderful Asian cuisine my mom and I have tried over the years.

A great bonus about this super simple recipe, though? It makes for a great way to clean out the fridge! You can pretty much throw anything into this dish and always have it come out delicious! So simple, but oh so good.

Equipment Needed

  • Large Skillet or Wok
  • Wooden Spatula

Ingredients

  • Lo Mein Noodles
  • Broccoli Florets
  • Shiitake Mushrooms
  • Onion
  • Carrot
  • Shrimp
  • Garlic
  • Red Pepper Flakes
  • Soy Sauce
  • Sesame Oil

Instructions

Cook lo mein noodles according to package directions, drain, and set aside.

In a large wok over medium heat, add sesame oil. Heat until shimmering. Add mushrooms, garlic, and red pepper flakes and sauté until tender, about 3 minutes.

Stir in shrimp and continue to cook for 2 minutes. 

Add onions, carrots, and broccoli. Sauté for about 1-2 minutes, or until desired degree of doneness.

Stir in lo mein noodles. Mix thoroughly.

Mix in soy sauce and serve!

How To Store

You can keep this lo mein in an airtight container and in the fridge for about 4-5 days. To reheat, you can either microwave it or place in a skillet over the stove with a little sesame oil to keep it from sticking.

Substitutions

The great thing about this dish is you can substitute almost anything to make it what you want! It’s so versatile and always delicious.

  • To make this recipe vegan, use udon or soba noodles, and leave out the shrimp (or substitute with tofu!).
  • If you don’t have shiitakes, you can use baby portobello mushrooms.
  • Olive oil an be used in place of sesame oil.
  • Any vegetables can be added or taken out of this recipe!

  • Be careful not to overcook the shrimp!

Asian-Inspired Shrimp Lo Mein

Nothing beats a large bowl of noodles! This Asian-Inspired Shrimp Lo Mein is simple, delicious, spicy, and the perfect weeknight dinner.

Ingredients
 

  • 1 ½ cups broccoli florets
  • 3 cups shiitake (or baby bella) mushrooms,, sliced
  • ½ cup onion,, sliced
  • 1 cup carrot,, julienned
  • 12 ounces shrimp,, peeled and deveined
  • 1 garlic clove,, crushed
  • ¼ teaspoon crushed red pepper flakes,
  • ¼ cup soy sauce,, or to taste
  • 8 ounces Lo Mein noodles
  • 1 Tablespoon sesame oil
  • 1 green onion, chopped for garnish (optional)

Instructions
 

  • Cook lo mein noodles according to package directions, drain, and set aside. (They will stick together when you leave them! Don’t worry about it. Splash them with some cold water before tossing them in at the end.)
  • In a large wok (or skillet) over medium heat, add sesame oil. Heat until shimmering.
  • Add mushrooms, garlic, and red pepper flakes and sauté until tender, about 3 minutes.
  • Stir in shrimp and continue to cook for 2 minutes. 
  • Add onions, carrots, and broccoli. Sauté for 1 minute or until desired degree of doneness.
  • Stir in lo mein noodles. Mix thoroughly.
  • Add soy sauce.
