This Chicken Caprese Sandwich is the summertime sandwich to make for lunch, as a quick dinner, brought along to picnics, or even served at get-togethers with friends and family! Homemade basil pesto, grilled chicken, fresh mozzarella cheese, garden fresh tomatoes and basil, and a drizzle of balsamic vinegar. All sandwiched between light, fluffy, and delicious ciabatta bread! This bright, flavorful, and yummy take on the classic dish is a guaranteed crowd favorite. It’s pretty much the only sandwich you’ll ever need this summer! SO. GOOD.

About The Recipe

Summer is for sandwiches! They’re easy, light, filling, typically don’t require very much effort, and come together in 3-5 minutes. Though, it can be very easy to get stuck in a rut/get bored of sandwiches when you make them often…I’m speaking from experience here!

Me and my mom are always looking for new ways to reinvent the ordinary chicken sandwich.

The inspiration behind this sandwich simply came from our own backyard! Our basil harvest is… plentiful to say the least! We have, what we call, “volunteer” basil sprouting all around where we originally planted our basil in the garden. It’s been really kind of funny to watch them sprout up through the gravel!

And when I say we use every bit of it, I really mean it! One of our favorite things on the blog is our Homemade Basil Pesto. We use it for so many dishes! From pizzas, to pastas, and now sandwiches.

Plus, one of my mom’s favorite things is a caprese salad. We make it often during the summer! Though, I always make me some without tomatoes (not an allergy. just oddly don’t like raw tomatoes? I can eat cooked ones fine, but raw…nope). Honestly, nothing better than just some basil, mozzarella, and a little bit of bread!

So, with some chicken fresh off the grill, we thought it would be fun to try and make a caprese chicken sandwich!

I am SO glad we did! These sandwiches were a HUGE hit and tasted sooooo freaking good.

Every bite is bright, flavorful, basil-y, cheese-y, with delicious sweet and tangy notes from the balsamic. You couldn’t have asked for a better sandwich to enjoy all summer long!

What is a Chicken Caprese Sandwich?

Honestly, if you’ve ever had a caprese salad, it’s just like that! Just with some bread and chicken added to it. If you’ve never had one, it’s simply fresh mozzarella cheese with basil leaves, fresh tomatoes, and a drizzle of balsamic. Typically served as an appetizer, we decided to give it a bit of a make-over and turn it into a delicious lunch or dinner!

Equipment Needed

Ingredients

  • Ciabatta Bread Rolls
  • Basil Pesto
  • Grilled Chicken Breast
  • Fresh Mozzarella Cheese
  • Fresh Tomato
  • Basil Leaves
  • Balsamic Vinegar

How To Make Chicken Caprese Sandwich

Step 1: Build the sandwich

Slice sandwich bun open horizontally. Spread half of pesto on each side.

Place chicken on bottom. Top with tomato slices and add mozzarella cheese.

Cover top of mozzarella with basil leaves. Drizzle with balsamic.

Step 2: Enjoy

Top with other half of bun and enjoy!

What’s The Best Cheese To Use?

Sliced fresh mozzarella is hands-down the best cheese to use for this sandwich. It really makes this sandwich POP! Though, if you don’t have any, a low moisture sliced mozzarella (typically found in the deli at grocery stores) can be used. The sandwich will taste quite a bit different, but it should still be okay.

Substitutions

  • If you don’t have ciabatta, you can use any type of sandwich bun that you like!
  • You can use store-bought basil pesto.
  • Any neutral flavored chicken you have can be used for this sandwich! We had grilled chicken, so that’s what we used, but you can sauté some, use rotisserie chicken, or even chicken deli meat.

Ingredients
 

  • 1 ciabatta bread roll
  • 1 Tablespoon basil pesto
  • ½ grilled chicken breast, sliced
  • 3 slices fresh mozzarella cheese
  • 5-6 slices tomato
  • basil leaves, to cover
  • teaspoons balsamic vinegar

Instructions
 

  • Slice sandwich bun open horizontally.
  • Spread half of pesto on each side.
  • Place chicken on bottom.
  • Add tomatoes.
  • Top with mozzarella.
  • Cover top of mozzarella with basil leaves.
  • Drizzle with balsamic vinegar.
  • Top with other half of bun.
