I know Monday’s are everyone’s least favorite day of the week, but we have a reason to celebrate this week. Why? Well, it’s my mom’s birthday on Wednesday!

And, even though we’re out of town this week, we wanted to share a few

One of her absolute favorite breakfast treats are cinnamon rolls. So, as a way to start the week, we thought it would be fun to jazz up our classic cinnamon roll recipe!

I mean who wouldn’t love cinnamon rolls for their birthday?!

Though, this recipe isn’t like your average/ordinary cinnamon roll. Every bite is pillow-y, soft, perfectly sweet, and practically just melts in your mouth.

Plus, there’s sprinkles. I mean, what’s not to love? Though, I think the real star of the show may actually be the silky cream cheese frosting on top.

Not only does it add flavor, but it perfectly compliments the sweet cinnamon-y filling of these decadent rolls!

Equipment Needed

Ingredients

(Full ingredient amounts and instructions can be found in the recipe card at the bottom of the post)

For The Dough:

  • Salted Butter – for this recipe, we like to use salted butter, but if all you have is unsalted, that will work, too!
  • Whole Milk – to ensure that you have a super soft, fluffy, melt in your mouth delicious dough, it’s best to use whole milk.
  • All-Purpose Flour – No need for anything fancy here! Just regular unbleached all-purpose works beautifully for this recipe.
  • Granulated Sugar – Just enough to slightly sweeten your dough and give your yeast somethng to feed off of!
  • Instant Yeast – The wonderful ingredient that creates lift and gives these rolls their beautiful structure.
  • Salt – Just a dash of salt to enhance the flavors.
  • Large Egg – These cinnamon rolls are an enriched dough, which means the addition of eggs and milk! It’s best best to get your eggs out about an hour or so early and allow them to come to room temperature.
  • Rainbow Sprinkles – Adds a cute pop of color!

For The Filling:

  • Salted Butter – Our go-to for filling! It helps balance the sweetness, but also bring out the cinnamon flavor.
  • Brown Sugar – Brown sugar is that caramel-y, gooey, goodness that’s found in the center of every cinnamon roll. You can use light or brown sugar, but do NOT use granulated sugar!
  • Ground Cinnamon – Obviously!! The ultimate flavor. We use Vietnamese cinnamon, as that’s our favorite for flavor and heat, but you can use whatever you have on hand!
  • Salt – A must-have addition for the filling.
  • All-Purpose Flour – To bind everything together and everything there. Which means, you have a gorgeous swirl every time!
  • Vanilla Extract – A splash of vanilla makes everything better, as well as help round out the flavors and make tis filling just standout from the rest.

For The Frosting:

  • Heavy Cream – This is our secret to our no-fail cream cheese frosting! Using whipped cream helps keep the frosting stabilized and less likely to melt.
  • Cream Cheese – Makes this frosting irresistibly rich and tangy!
  • Salt – Cuts the sweetness slightly.
  • Powdered Sugar – Gives this frosting the perfect amount of sweetness, while also making it the perfect consistency.
  • Vanilla Extract – Just a splash to give this frosting the best-ever flavor!

How To Make Funfetti Cinnamon Rolls

Step 1: Prepare dough

In the bowl of an electric mixer fitted with a dough hook, combine flour, sugar, yeast, and salt.

In a small saucepan, combine milk and butter. Heat over medium low heat until butter is melted. Cool to between 120°F and 130°F.

Pour over flour mixture. Turn mixer on low. Once the liquid is incorporated, add the egg.

Add the egg. When the egg is mixed in, turn speed to medium high. Knead until smooth and elastic, about 7-8 minutes.

Add sprinkles and knead only to mix in.

Step 2: Prove

Scrape into prepared container. Snap on lid, or cover with plastic wrap. Leave in a warm place to rise until doubled in bulk, about 1½-2 hours.

Step 3: Make filling

Combine all ingredients in a medium bowl. Beat with an electric mixer until well combined. Set aside.

Step 4: Roll out and fill

Turn dough out onto a floured surface. Roll into a rectangle that is 16-inches long.

Spread filling evenly over dough, going all the way to the edges.

Step 5: Slice and prove

Beginning with the long (16″) side of the dough, roll dough jelly-roll style. Using a sharp knife, gently slice dough into 2-inch rolls.

Place in prepared pan. Cover with plastic wrap. Let rise in a warm place until nearly doubled in bulk, about 1-1½ hours.

Step 6: Bake

Bake rolls until golden brown, about 25 minutes.

Step 7: Make frosting

In a medium bowl, beat cream to medium peaks.

Add cream cheese, one cube at a time.

Add salt and powdered sugar. Beat until smooth.

Beat in vanilla.

Spread on cooled rolls. Top with extra sprinkles, if desired.

Frequently Asked Questions

Can more than 8 rolls be made?
Absolutely! There is a double and triple button in the recipe card below.

How can I tell when the dough is properly kneaded?
A properly kneaded dough should be smooth and shiny. The bowl of the mixer should also be clean and the dough should lift out of the mixer in one piece, rather than ripping into two pieces.

Why didn’t my dough rise?
Is your yeast in-date? If not, then you need to get new yeast and try again. If it is, did you check the temperature of the butter/milk mixture? When the mixture is over 120-130 degrees, it’ll kill your yeast! Be sure to have a thermometer on hand.

Can these rolls be made ahead of time?
Definitely! That’s one of our favorite things about this recipe. You can bake these rolls ahead of time and store in the freezer. It’s always best to make the icing fresh, but it can be made the day before you need it. Just store in an airtight container and keep in the fridge.

What’s the best way to cut cinnamon rolls?
In our opinion, a very very sharp knife! But, instead of pushing down to cut the rolls, we very gently make slow slices through the dough, then wipe our knife to keep the swirls clean!

Why is my cream cheese frosting lumpy?
There are a couple of reasons that this could happen! The most common cause is that the cream cheese wasn’t beaten in properly. Though, another cause can be lumpy powdered sugar!

When’s the best time to frost the cinnamon rolls?
Personally, we tend to let the cinnamon rolls cool about 10 minutes before frosting. If you frost them while the cinnamon rolls are too hot, the cream cheese frosting will melt!

How To Store

The best way to store these rolls is unfrosted and in the freezer!

They will keep for up to 3 months. This way, you can easily reheat them in the oven for almost-like fresh baked sweet roll! Just be sure to get them out of the freezer a few hours prior to reheating and remember to cover them with foil.

If the rolls already have icing on top, no worries! You can store in the fridge or freezer.

In the fridge, they’ll keep about 3-5 days. In the freezer, about a month or so. Just allow to come to room temperature or place one sweet roll in the microwave for 30 seconds – 1 minute on high heat (keep in mind that, this way, the frosting will melt!).

  • If milk mixture does accidentally boil, don’t worry! You haven’t hurt it. It just takes longer to cool down this way. Just give it time to cool to 120-130 degrees before pouring it into the dry ingredients.
  • Don’t have a big enough lidded container to allow the dough to rise? You can put the dough in a glass bowl and cover it with plastic wrap!
  • We found it’s best to use rainbow jimmies, as the color doesn’t bleed into the dough.
  • The butter for the filling needs to be room temperature.

These Funfetti Cinnamon Rolls With Cream Cheese Frosting are the perfect breakfast treat to celebrate birthday's or really any occasion! Pillow-y sweet dough loaded with cute rainbow sprinkles and filled with double the amount of cinnamon filling. Every bite just melts in your mouth!

Ingredients
 

Rolls

  • cups all purpose flour*
  • cup granulated sugar
  • 2 teaspoons instant yeast
  • ¼ teaspoon kosher salt
  • cup whole milk
  • cup unsalted butter
  • 1 large egg, room temperature
  • ¼ cup rainbow sprinkles

Filling

  • ½ cup unsalted butter, room temperature
  • ½ cup brown sugar, firmly packed
  • 2 Tablespoons ground cinnamon
  • ¼ cup all purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Frosting

  • ½ cup heavy cream, cold
  • ½ cup cream cheese, cubed
  • 1/16 teaspoon salt
  • 1 cup powdered sugar, sifted
  • ½ teaspoon vanilla extract

Instructions
 

Rolls

  • Spray a covered container or glass bowl with cooking spray. Set aside.
  • In the bowl of an electric mixer fitted with a dough hook, combine flour, sugar, yeast, and salt.
  • In a small saucepan, combine milk and butter.
  • Heat over medium low heat until butter is melted.
  • Cool to 120℉ – 130℉.
  • Pour over flour mixture.
  • Turn mixer on low.
  • As the liquid in incorporated, add the egg.
  • When the egg is mixed in, turn speed to medium high.
  • Knead until smooth and elastic, about 7-8 minutes.
  • Add sprinkles.
  • Knead only to mix in.
  • Scrape into prepared container.
  • Snap on lid, or cover with plastic wrap.
  • Leave in a warm place to rise (or use a proofing box with a water tray set to 78℉; don't cover) until doubled in bulk, about 1½-2 hours.
  • While dough is proofing spray a 10 inch round casserole with baking spray. Set aside.
  • Make the filling.

Filling

  • Combine all ingredients in a medium bowl.
  • Beat with an electric mixer until well combined. Set aside.

Putting It Together

  • Turn dough out onto a floured surface.
  • Roll into a rectangle that is 16-inches long.
  • Spread filling evenly over dough, going all the way to the edges.
  • Beginning with the long (16 inch) side of the dough, roll dough jelly-roll style.
  • Using a sharp knife, gently slice dough into 2 inch rolls.
  • Place in prepared pan.
  • Cover with plastic wrap.
  • Let rise in a warm place until nearly doubled in bulk, about 1-1½ hours.
  • While dough is proofing, heat oven to 350℉.
  • Bake rolls until golden brown, about 25 minutes.

Frosting

  • In a medium bowl, beat cream to medium peaks.
  • Add cream cheese, one cube at a time.
  • Add salt and powdered sugar.
  • Beat until smooth.
  • Beat in vanilla.
  • Spread on cooled rolls.
  • Top with extra sprinkles, if desired.

Notes + Tips!

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
