The Best Funfetti Cake (Blog Anniversary Post!)

Time to ditch the boxed cake mix! This funfetti cake is not only absolutely friggin’ delicious, it’s super easy to make. One might even say that making it is … a piece of cake!

I have been WAAAITING to make that joke and finally my day has come! Plus, sharing this recipe has been a huge excitement around the house.

Why, you may ask? Well, August is OFFICIALLY our blog anniversary! Or… Blogiversary. What ever you may call it, Mississippi Delta Hospitality has been live for a year now!

Can you guys believe it? We couldn’t think of a better way to celebrate than making this delicious and super simple Funfetti Cake.

So much has changed on this blog since we started. It seems almost unreal sometimes! We are so grateful to be able to sit here and say this is our job, most days it doesn’t even feel like one!

Now, I bet you’re wondering about this funfetti cake. Is it as good as they say? The answer is YES!

We’re definitely not the type to say this recipe will change your life, the only recipe you’ll ever need but… This cake is totally the only recipe you’ll ever need!

Because, come on, who doesn’t love a cake filled with rainbow sprinkles?! It’s cute, easy, absolutely delicious, and takes less than hour to make!

Seriously, what could be better?

How to make a funfetti cake

Okay, first things first! Gather all your ingredients. Let your butter and eggs come to room temperature. Sift and measure your flour. Add the baking powder and salt to the measured out flour. Separate the eggs, being sure not to get any yolk in the whites.

Now you are ready to go. Preheat your oven and prep your cake pans!

Beat the butter and sugar together until they are light and fluffy. That usually takes 3-4 minutes.

Next, add the dry ingredients alternately with the milk. Stir in the vanilla and the sprinkles.

In a separate bowl, beat the egg whites to stiff peaks. Then, fold the egg whites into the cake batter carefully. Make sure they are well incorporated!

Now, pour the batter into the prepared pans and bake for 30 minutes or until done! Let cool and take out of pans. Make sure to level your cake before you ice it!

I love to use our American Buttercream recipe for this cake. This is truly personal preference but I love how it can hold up to whatever I need! From icing to decorating, it’s truly the perfect frosting.

Expert tips

  • Make sure ingredients are at room temperature before you begin.
  • Sift the flour before measuring it!
  • If you accidentally get some egg yolk in the whites and can’t get it all out, add a pinch of cream of tartar before beating.
  • Baking spray makes preparing your pans easy. But if you don’t have any, you can prep your pans by rubbing the bottoms and sides with butter or shortening and coating it with flour. If you use this method, be sure to top out the extra flour.

Ingredients
 

  • 1 ¾ cups sugar
  • ¾ cup unsalted butter
  • 3 cups sifted cake flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1 Tablespoon vanilla
  • cup sprinkles
  • 5 egg whites

Instructions

  • Preheat oven to 325 degrees.
  • Spray 3 8-inch pans with baking spray (or grease and flour).
  • Whisk together cake flour, baking powder, and salt. Set aside.
  • Beat butter and sugar until light and fluffy, about 3-4 minutes.
  • Add flour mixture alternately with milk, beginning and ending with flour mixture.
  • Stir in vanilla and sprinkles.
  • Beat egg whites to stiff peaks and fold into cake batter.
  • Pour into prepared pans and bake for 30 minutes, or until cake tests done.
