The cutest and sweetest cake to celebrate any occasion…Funfetti Cake! It’s time to ditch the boxed cake mix because this cake is not only easy to make, but tastes SO much better. Three layers of light and fluffy vanilla cake that’s full of colorful rainbow sprinkles, sandwiched between luscious layers of an easy-to-make buttercream frosting. Every bite is sweet, full of vanilla flavor, and oh-so delicious!

I am so excited to share this post with all of you! Funfetti cakes are such a fun and delicious dessert that doesn’t take any real effort, but it’s also used for celebrating…and we’ve definitely got something to celebrate.

What may that be, you ask? Well, August is OFFICIALLY our blog anniversary! Or… blogiversary. What ever you may call it, Bakers Table has been live for a year now!

Can you believe it? We couldn’t think of a better way to celebrate than making this delicious and super simple Funfetti Cake.

So much has changed on this blog since we started. It seems almost unreal sometimes! We are so grateful to be able to sit here and say this is our job, most days it doesn’t even feel like one!

This blog has been such a joy to run for the last year. We have had our fair share of ups and downs, crashing the website, and slowly learning what we’re doing.

Honestly, running this blog is a real source of happiness for me and my mom! We get to do the one thing we love…share delicious and easy recipes with people.

We’re definitely not the type to say this recipe will change your life, the only recipe you’ll ever need but… This cake is totally the only recipe you’ll ever need!

Because, come on, who doesn’t love a cake filled with rainbow sprinkles?! It’s cute, easy, absolutely delicious, and takes less than hour to make!

Seriously, what could be better?

What is Funfetti Cake

Funfetti cake, or confetti cake, is a simple vanilla cake with rainbow sprinkles added to it. When it’s baked and cut into, the cake looks like confetti suspended throughout the cake! The word Funfetti comes from the brand Pillsbury.

Equipment Needed

Ingredients

(Full ingredient amounts and instructions can be found in the recipe card at the bottom of the post)

For The Cake:

  • Granulated Sugar – This cake does have quite a bit of sugar in it, as it’s for 3 layers, but it’s the perfect amount of sweetness in every bite!
  • Unsalted Butter – We like to use unsalted butter in this recipe to control the amount of salt in the recipe.
  • Cake Flour – For the best texture and crumb, it’s best to splurge a little on flour and buy some cake flour for this recipe! It really makes all the difference in this cake.
  • Baking Powder – Adds the perfect amount of lift to this cake to ensure each bite is light and fluffy.
  • Salt – Just the right amount to cut the sweetness and enhance the flavors!
  • Whole Milk – It’s best to use room temperature whole milk for this cake.
  • Large Eggs – You will need 3 large room tempter eggs, plus one egg yolk!
  • Vanilla Extract – Use a high quality vanilla extract for the best flavor.
  • Rainbow Sprinkles – We found that rainbow jimmies work best for this recipe!

For The Frosting:

  • Salted Butter – This helps cut the sweetness of the frosting! Though, if all you have is unsalted butter, you can use that. Just be sure to add a dash of salt to the frosting to cut some of the sweetness.
  • Powdered Sugar – Use sifted powdered sugar for a lump-free frosting.
  • Heavy Cream – The heavy cream ensures a silky smooth texture, while remaining light and fluffy!
  • Vanilla Extract – This adds an extra pop of vanilla flavor to every bite.

How To Make Funfetti Cake

Step 1: Make the cake batter

Whisk together cake flour, baking powder, and salt. Set aside.

Beat butter and sugar with an electric mixer until light and fluffy, about 3-4 minutes.

Add eggs, one at a time, beating well after each addition.

Add the flour mixture alternately with milk, beginning and ending with flour mixture.

Mix in the vanilla.

Stir in sprinkles.

Step 2: Bake

Spoon into prepared pans. Bake for 20 minutes, or until cake tests done. After about 10-15 minutes, turn out onto cooling rack and let the cake layers finish cooling.

Step 3: Make the frosting

With an electric mixer, beat butter and sugar until light until smooth.

Add cream and vanilla. Beat until light and fluffy.

Step 4: Assemble and decorate

Level the cake layers, if needed. Place one cake layer on cake plate. Spread with a layer of frosting.

Repeat with the second layer. Add the third layer.

Frost entire outside cake with a thin layer of frosting (this is called a crumb coat!). Set in refrigerator to set, about 5-10 minutes.

Once the frosting is set, frost the entire cake.

With the remaining frosting, decorate as desired!

How To Achieve The Perfect Buttercream

There are are a few things you can do to make sure you get the creamiest, silkiest buttercream every single time!

The first is making sure your butter is room temperature. This is super important! Another is sifting your powdered sugar. Lumps of powdered sugar = lumpy buttercream!

Also, be sure to properly beat the butter and powdered sugar. It needs to be well combined, light, fluffy, and smooth before you add the heavy cream and vanilla.

Decorating Ideas

Since the itself is cake is so cute, I love leaving it as simple as possible! Though, here are a few different ways you can decorate this cake.

  • Naked Cake – This might sound a bit odd, but it’s such a cute way to display this cake! Instead of frosting the cake after assembly, you leave it as-is. It’s super simple and shows off the cake really well.
  • Semi-Naked Cake – Essentially, this is just doing the crumb coat! There’s just enough frosting to see some, but it still lets you see the cake. It’s a very cute way to decorate, especially if you don’t like a lot of frosting!
  • Frosted – Yep. You can completely frost this cake, as well! It works very well if you wan’t to stick things to the side of the cake.
  • Extra Sprinkles – I feel like with a funfetti cake, you just NEED more sprinkles. I love to use them on the outside of the cake (as you can see in my pictures!). It just adds a fun pop of color!
  • Candy Melts – Crazy, I know. But hear me out! Melt a pretty color of candy melt that matches the rainbow theme (or simply someone’s favorite color) to make drips along the sides of the cake. I would do this on the Semi-Naked or Frosted Cake, as it will be more stunning.
  • Pipe The Frosting – You can really pipe just about anything/any pattern onto this cake. You may need to make more frosting, depending on how much you want to do.
  • Color The Frosting – Grab a box of food coloring and have fun! You can dye the frosting almost any color. You could also do multiple different colors!

How To Store

Since this is a layer cake, you actually have a few ways to store this cake!

First, you can make the cake layers ahead of time. After baking (and cooling!) store the individual cake layers in freezer-safe zip top bags and freeze for up to a month. The frosting can be made about 1-2 days in advance, but it’s much easier to work with fresh!

If the cake is already assembled, you can leave this cake out on the counter, covered, at room temperature for about a day, but it’s really best kept in the fridge for 3-5 days. Another option is freezing the cake! You can freeze the cake as a whole or as individual slices. Just make sure to cover it!

Cake

  • 1 ¾ cups sugar
  • ¾ cup unsalted butter, room temperature
