Feeling lucky with these simply delicious Lucky Charms Sugar Cookies! These are the perfect cookie to celebrate St. Patricks Day. Think, a homemade vanilla sugar cookie dough made with plenty of lucky charms cereal, baked until the edges are perfectly crisp, but the middle is still oh-so soft and chewy. The best part? These cookies take 10 minutes to mix up, require no chilling, and taste SO. GOOD. Every bite is perfectly sweet, with a little bit of crunch, and loaded with sweet marshmallows. YUM!

About The Recipe

Remember our Lucky Charms Milkshake from Saturday? I know I said it then, but we have a LOT of Lucky Charms left, so we wanted to keep the theme going and make another sweet treat.

This time, we decided to bake a batch of cookies! I mean, is there anything better than homemade cookies?

When we were testing this recipe, we originally made it with a chocolate chip cookie base, and while it tasted delicious, it kept becoming over-brown and almost giving a burnt flavor to the cereal.

Though, we weren’t quite ready to give up on this recipe. So, we changed the base to a sugar cookie and…it worked!

The cookie was lightly crunchy on the edges, soft and chewy in the middle, with plenty of flavor coming from the bits of cereal.

Honestly, dipping these cookies in a glass of milk really tastes like having a bowl of cereal!

Which, totally makes it a great excuse to have cookies for breakfast.

  • Unsalted Butter – We like to use unsalted butter in this recipe to help us control the amount of salt in this recipe.
  • Granulated Sugar – Adds the perfect amount of sweetness, while giving these cookies a slightly crispy texture.
  • Large Eggs – For these cookies, you will need one large egg and an egg yolk. Remember to set them out ahead of time to allow them to come to room temperatures.
  • Vanilla Extract – A splash of vanilla to give these cookies a little bit of flavor.
  • All-Purpose Flour – Gives these cookies the perfect structure!
  • Baking Soda – Provides just enough rise, while helping these cookies spread just a little bit.
  • Salt – Helps cut sweetness and enhance the flavors in the cookie.
  • Lucky Charms Cereal – Adding the cereal not only adds crunch, but as well as some flavor and extra sweetness from the marshmallows!

How To Make Lucky Charms Cookies

Step 1: Prepare cookie dough

With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes.

Add egg, egg yolk, and vanilla. Beat until smooth.

Stir in flour, baking soda, and salt.

Fold in cereal.

Step 2: Bake

Use a 3 Tablespoon scoop to portion dough onto prepared pans, about 6 cookies per pan. Flatten slightly. Bake for 20 minutes, until slightly browned around edges.

The best way to achieve this is using a cookie scoop, as the dough balls will already be in close-to-perfect round. As they bake, the cookies will spread into a perfect round shape!

Though, sometimes the cookies can get a little wonky-shaped while spreading, but no worries! You can still fix it.

Using a biscuit cutter that’s larger than the cookie, bump the cookies while they’re still very hot to fit inside the cutter and circle around them to create the perfect round shape!

What To Make With These Lucky Charms Cookies

The great thing about cookies is that you can do almost anything with them after they are baked! Though, here are some of our favorites.

How To Store

The best part about these cookies? They can be frozen for up to 3 months! Oh, yes, that’s right. After baking and cooling, you can place the baked cookies in an airtight freezer safe zip top bag and put in the freezer.

Though, if you’d like fresh baked cookies, you can actually freeze the cookie dough itself! Follow the directions all the way to portioning out the dough. From there, place a few inches apart on a lined sheet pan and place in the freezer for 1-2 hours, or until the cookie dough is frozen solid. Then, place the frozen cookie dough balls in a zip top bag and keep in the freezer for 1-2 months.

You can also keep these cookies in an airtight container or zip top bag on the counter for about a week!

Lucky Charms Sugar Cookies

These Lucky Charms Sugar Cookies are the perfect cookie for any cereal lover! Every bite is sweet, slightly crunchy, and full of marshmallows. It's so simple, but SO good.

Ingredients
 

  • cup unsalted butter, room temperature
  • cups granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • teaspoons vanilla extract
  • cups all purpose flour*
  • teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups lucky charms cereal

Instructions
 

  • Heat oven to 325℉.
  • Line 2 or 3 sheet pans with parchment paper. Set aside.
  • With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes.
  • Add egg, egg yolk, and vanilla.
  • Beat until smooth.
  • Stir in flour, baking soda, and salt.
  • Fold in cereal.

  • Allow to cool on pan.

Notes + Tips!

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
