Puff Pastry Wrapped Baked Brie with Mushrooms Rosemary and Garlic

The perfect holiday appetizer…Puff Pastry Wrapped Baked Brie with Mushrooms Rosemary and Garlic! Super simple to make, using store-bought puff pastry to wrap the brie, and baked in about 40 minutes. It comes together so easily and it is SO flavorful! The perfect way to start any meal or even enjoy as a snack with friends and family. Every bite is cheesy, buttery, herby, with lots of mushrooms! Serve with your favorite crackers or even slices of toasted bread for a delicious appetizer that everyone will love. It simply doesn’t get any better than this!

About The Recipe

If there’s one thing me and my mom love, it’s baked brie. We make it when we are just having out and enjoying a Charcuterie Board and movie, we make some when we have family over, as a quick lunch…just any excuse to have delicious melty cheese with some bread.

Though, this baked brie might just be our best yet.

We had some puff pastry leftover after testing a different recipe (which I am SO excited for!). It wasn’t really enough to do anything else with, so we started thinking. We already had some brie in the fridge and this is kind of something we’ve wanted to test for a while!

We made it with just brie and puff pastry the first times, just to have a snack and see how it worked. It tasted okay, but it was a little bland.

Of course, us being us, we always have mushrooms. So, we sautéed a few with some garlic, rosemary, butter, and white wine to give the brie a little bit more oomph!

Ohmygosh... It was probably the best thing I have ever tasted as far as appetizer/snacks are concerned. The mushrooms added this wonderful depth of flavor that was missing and really made it highly addicting!

My mom and I just KNEW we had to share it for the holiday’s, movie night, game day, or just whenever you need a deliciously gooey, cheesy, flavorful appetizer that the whole family will love.

Equipment Needed

Ingredients

For The Pastry Wrapped Brie:

  • Salted Butter
  • Sliced Mushrooms
  • Minced Garlic
  • Chopped Rosemary
  • Dry White Wine
  • Salt and Pepper
  • Frozen Puff Pastry
  • Wheel of Brie

For The Egg Wash:

  • Large Egg
  • Water

How To Make Puff Pastry Wrapped Brie

Step 1: Sauté

Melt the butter and add mushrooms, garlic, and rosemary.

Add the white wine and continue to cook for another 1-2 minutes. Set aside.

Step 2: Cut and roll dough

Fold out one pastry sheet onto a lightly floured surface. Cut along one of the lines (either the left or right side). With the smaller (rectangular) piece of dough, cut in half.

Working with the smaller piece of dough, roll out to 1/16 inch.

Step 3: Assemble

Place the brie in the middle of the dough. Top with sautéed mushrooms.

Fold dough up and over brie.

Step 4: Make egg wash

In a small bowl, beat egg and water until smooth.

Step 5: Brush, freeze, and bake

Use a pastry brush to brush mixture over entire surface of pastry. Place in freezer for 15 minutes. Remove from freezer and bake for 30-35 minutes, until pastry is golden brown.

Substitutions

  • We used baby bella mushrooms for this recipe. You can use whatever mushrooms that you like! You can even use a blend of different mushrooms.
  • You can use fresh thyme or sage instead of rosemary, but this will change the flavor.
  • Homemade puff pastry can also be used for this recipe.

Expert Tips

  • The puff pastry needs to be rolled out on a lightly floured surface.
  • Let the mushrooms cool before adding them on top of the brie.
  • Be careful to not rip the puff pastry when wrapping the brie! It will be very thin.
  • If the puff pastry isn’t wanting to stick to itself, you can use a small amount of the egg wash to help stick it together.
  • Don’t skip the freezing period! The pastry will be too warm to bake immediately and it needs to be cold to puff.
  • This recipe needs to be served warm, right out of the oven. If it cools too much, the brie will not be melted when you cut into it.

The perfect appetizer for any and every occasion…Puff Pastry Wrapped Baked Brie with Mushrooms Rosemary and Garlic! Every bite is cheesy, melty, full of flavor, and absolutely delicious.
Prep Time: 25 minutes
Cook Time: 40 minutes
Freezing Time 15 minutes
Total Time: 1 hour 20 minutes
Servings: 6

Ingredients
 

  • 2 Tablespoons salted butter
  • ½ cup sliced mushrooms
  • 1 clove garlic, minced
  • ¾ teaspoon chopped rosemary
  • 2 Tablespoons dry white wine
  • salt and pepper, to taste
  • sheet frozen puff pastry, thawed
  • 7 ounce wheel of brie
  • 1 large egg
  • 1 Tablespoon water

Instructions
 

  • Heat oven to 400℉.
  • Line a small sheet pan with parchment paper. Set aside.
  • In a small skillet over medium heat, melt butter.
  • Add mushrooms, garlic, and rosemary.
  • Sauté until mushrooms are cooked through, about 3-4 minutes.
  • Add white wine.
  • Continue cooking for 1-2 minutes, or until mushrooms have absorbed wine. Set aside.
  • On a lightly floured surface, roll puff pastry to 1/16 inch.
  • Place brie in center of dough.
  • Top with mushroom mixture.
  • Fold dough up and over brie.
  • Place on prepared pan.
  • In a small bowl, beat egg and water until smooth.
  • Use a pastry brush to brush mixture over entire surface of pastry.
  • Place in freezer for 15 minutes.
  • Remove from freezer and place in oven.
  • Bake for 30-35 minutes, until pastry is golden brown.
