The sweetest and cutest Raspberry White Chocolate Truffles. Think your favorite truffles, but made with white chocolate, filled with raspberry jam ganache, and finished with a light coating of sweet melted white chocolate. Trust me, not only are these truffles insanely delicious, but they are the perfect treat for Valentine’s Day! Each truffle is topped with a little bit of raspberry powder to really make them POP! Sweet, fruity, and the perfect balance between sweet white chocolate and raspberries. These truffles are easy to make, fun, and so very delicious! Oh, and the best part? They’re naturally colored! The loveliest and prettiest truffles to mix up any time of year, but especially during February. So. GOOD.

About The Recipe

With all the delicious chocolate recipes we’ve been sharing leading up to Valentine’s Day, we couldn’t help but also share something for the white chocolate lovers out there! So, we went allllllll out with the white chocolate. I mean, does it get any better than a homemade truffle for Valentine’s Day?

We had just made a batch of Raspberry Jam because we had some raspberries starting to go bad and we needed something to with all of it..because we had a BIG batch!

Well, one of my favorite flavor combinations has always been raspberries and white chocolate. It’s a classic for a reason! The white chocolate balances out the tartness of the raspberries and creates something irresistible…but when you turn it into a truffle?

Ohmygosh. It’s so hard to eat only one!

Especially when you use our homemade raspberry jam. We add just a touch of lemon juice to the jam to tame some of that sugar. Though, trust me, it REALLY works with this delicious and creamy truffles.

Equipment Needed

Ingredients

For The Ganache:

  • White Chocolate
  • Heavy Cream
  • Corn Syrup
  • Raspberry Jam
  • Raspberry Liqueur

For The Coating:

  • White Chocolate
  • (optional) Vegetable Oil

How To Make Raspberry White Chocolate Truffles

Step 1: Make the filling

Combine white chocolate and heavy cream in a large glass bowl. Microwave at 30 second intervals, stirring in between each, until the white chocolate is melted.

Stir in the corn syrup.

Add the raspberry jam and mix well.

Carefully, stir in the raspberry liqueur.

Step 2: Refrigerate and scoop

Transfer the mixture into a glass casserole and cover with plastic wrap. Refrigerate until hardened, about 4-6 hours.

Using a small cookie scoop, scoop out 22 balls. Refrigerate for 1-2 hours. Roll each ball with a light dusting on powdered sugar on your hands. Refrigerate for 1 hour.

Step 3: Melt the chocolate

For the coating, melt white chocolate chips in a microwave safe bowl at 30 second intervals, stirring in-between each, until chocolate is smooth. If your white chocolate is a too thick, add 1 – 1 ½ teaspoons of vegetable oil at a time until the chocolate loosens. You do NOT need to put it back in the microwave. Simply stir in the vegetable oil as needed.

Step 4: Dip and set

Dip the ganache into the melted white chocolate. Set on a line sheet pan and let the chocolate set.

How To Make Raspberry Jam

Want to make your own raspberry jam for this recipe? No problem! Follow the simple steps below to make your own.

  1. Combine 2 cups of fresh or frozen raspberries, 1/2 cup sugar, and 2 Tablespoons lemon juice in a large saucepan.
  2. Cook over low heat until raspberries break down and jam starts to thicken, about 1 hour.
  3. Remove from heat. Let cool.

What Kind of White Chocolate To Use

For this recipe, you need to use high quality white chocolate. This means you cannot use baking chips or candy melts. You can actually tell if it is or not, not just by the ingredients, but by the color! Fake white chocolate will be a snow/pure white, whereas real white chocolate will be a much yellow in color.

Do I Need To Temper The Chocolate?

The best part of this recipe is that you don’t have to! While you totally can just temper the white chocolate, All you really need to do is mix vegetable oil and chocolate and melt it in the microwave. The vegetable oil gives the chocolate a beautiful shine to it and makes it really simple to reheat the white chocolate as necessary.

Best Raspberry Liqueur To Use

For us, we love using Chambord in this recipe! You can really use any raspberry liqueur that you love the flavor of. Though, if you want to make these truffles kid-friendly, you can definitely leave it out!

How To Store

Once the chocolate is set, these truffles can be placed in an airtight container and left at room temperature for 3-5 days. You can also refrigerate or freeze them!

  • You NEED to use a high quality white chocolate for this recipe.
  • Homemade or store-bought raspberry jam can be used.
  • Your hands will need to have powdered sugar on your hands to roll the truffles.
  • With this recipe, the freezer is your friend! If the ganache is ever too soft to work with, always put it in the freezer for 5-10 minutes.

  • When dipping the ganache, you may need to remelt the chocolate.

Raspberry White Chocolate Truffles

Ingredients
 

  • 2 cups white chocolate
  • ¼ cup heavy cream
  • 1 ½ Tablespoons corn syrup
  • cup raspberry jam
  • 1 ½ Tablespoons raspberry liqueur
  • 2 cups white chocolate,, melted or tempered

Instructions
 

  • In a microwave safe bowl, combine chocolate and cream.
  • Microwave on high power in 15 second increments, stirring after each, until melted and smooth.
  • Stir in corn syrup.
  • Fold in jam.
  • Gently mix in liqueur.
  • Pour into a small rectangular glass casserole dish.
  • Cover with plastic wrap.
  • Allow to cool completely at room temperature.
  • Refrigerate for 6-8 hours, until completely firm.
  • Line a sheet pan with parchment paper.
  • Use a 1-inch cookie scoop to portion candy onto prepared pan.
  • Cover and refrigerate until firm, about 1 hour.
  • Coat hands with powdered sugar, and roll candy into balls.
  • Cover and return to refrigerator.
  • Temper or melt chocolate.
  • Dip each ball into chocolate and place back on parchment-lined sheet pan.
  • Allow chocolate to set.

  1. Hi! Would these freeze well? I am having a bridal shower and would like to prepare as much as possible ahead of time.

    1. Hi Jessica! You can make the centers and freeze them, then dip the day before you need them. Make the recipe through step 14. Leave the centers in the refrigerator for a couple of hours, then place in the freezer overnight. Place frozen centers in a zip top freezer bag and store for up to 3 months. When you’re ready to finish the candies, place them in the refrigerator for 24 hours to thaw. Then allow them to come to room temperature before dipping. Let me know if you have any other questions.

  2. Hi These remind me of the Godiva White Chocolate Raspberry stars. Can you suggest some good quality white chocolate to use? I wanna try eventually using molds and just raspberry Jam inside.

    1. Hi Danielle! For a high quality white chocolate, we recommend using Callebaut, Valrhona, or Ghirardelli (it’s best to buy the bars of chocolate, not chips!). Hope this helps and let us know how it works! x, Caylie

  3. Confusing to me: Is the white chocolate made with cocoa butter (and other ingredients), or are you just using pure cocoa butter and calling that white chocolate?

  4. Last question….getting ready to temper the white chocolate but the recipe does not give the amount of vegetable oil to use. If you would please provide that, I will be a happy baker…

    1. Hi Cindy! I’m sorry about the oversight. All white chocolates melt differently. If you temper the chocolate, you don’t need to add anything to it. If you are simply melting, you might. If your chocolate seems too thick once it is melted, stir in small amounts of vegetable oil (1-1 1/2 tsp) at a time until you reach a good dipping consistency. I hope that clarifies things. If you need anything else, please let me know.
