Apple cider has become one of those ingredients we reach for every fall. Whether we’re serving a mug of warm spiced apple cider or baking with it, it just isn’t fall without it. So it was only a matter of time before it found its way into a bundt cake.

We wanted to make a cake with plenty of apple cider flavor that was just as easy to make as it was to serve. It took a few rounds of testing to get there. The first bake was disappointingly bland. The second had much better flavor, but was too oily. We went back to the drawing board, increased the apple cider and added bourbon to enhance the flavor, reduced the amount of oil, and switched entirely to brown sugar. The third bake was the charm. It resulted in exactly the cake we had imagined.

A Few Ingredients That Make A Big Difference

  • Use room-temperature eggs so the batter mixes evenly and rises beautifully.
  • Using fresh apple cider really enhances the flavor.
  • Use a bourbon that you like the flavor of. It doesn’t have to be expensive. We prefer one with a vanilla and spice profile.

How To Make The Cake

This really is a 2 bowl cake. Whisk the dry ingredients together in one bowl and the wet ingredients in another.

Pour the wet ingredients over the dry and whisk until the batter is smooth.

Pour the batter into a greased and floured bundt pan and bake for about 40 minutes, or until a cake tester inserted in the center comes out clean. Let it cool in the pan before turning out.

Spiced Apple Cider Bourbon Bundt Cake

Easy to make, super simple, and full of flavor! This Spiced Apple Cider Bourbon Bundt Cake will be your favorite cake to bake this Fall. Every bite just melts in your mouth!

Cook Time: 40 minutes
Total Time: 55 minutes
Servings: 20 slices

Ingredients
 

  • 2 cups fresh apple cider
  • 3 large eggs, room temperature
  • cup vegetable oil
  • ¼ cup bourbon
  • 2 cups all purpose flour
  • cups brown sugar, firmly packed
  • teaspoons apple pie spice
  • teaspoons baking powder
  • teaspoon baking soda
  • ¾ teaspoon salt

Instructions
 

  • Heat oven to 350℉/177℃.
  • Spray a 10-cup bundt pan with baking spray, or grease and flour it. Set aside.
  • In a medium bowl, whisk together cider, eggs, oil, and bourbon. Set aside.
  • In a large bowl, whisk together flour, brown sugar, apple pie spice, baking powder, baking soda, and salt.
  • Pour wet ingredients over dry ingredients.
  • Whisk until smooth.
  • Pour into prepared pan.
  • Bake for 40 minutes, or until a cake tester (or toothpick) inserted in the center comes out clean and the cake is pulling away from the sides of the pan.
  • Let it cool in the pan before turning out.

Notes + Tips!

Tips For Success:
  • You can use ground cinnamon instead of apple pie spice in this recipe!
  • Check the expiration date on your baking powder and baking soda.
  • Be sure to heavily grease your bundt pan!
  • We used a party bundt to make this recipe. If you use another pan, you may have less slices.
  • If using a 10-cup bundt, this cake will rise up over the edge of the pan and then fall slightly after cooling.
 
How To Store:
Keep the cake covered at room temperature for 1–2 days, or refrigerate it for up to 5–7 days. For longer storage, freeze the whole cake or individual slices, well covered, for 1–2 months.
