A super simple dump cake infused with warming spices, apple cider, a splash of bourbon, and sweetened entirely with brown sugar. It’s everything you love about Fall, but baked into a delicious bundt! Every bite is moist, bourbon-y, perfectly balanced between sweet and spiced, and just enough apple cider to really round it all together. The best part? This cake is no fuss, requires only two bowls, is naturally dairy-free, full of flavor, and a serious crowd pleaser. Serve as an extra special breakfast treat this Fall season or even as a simple dessert that everyone is sure to love.
About The Recipe
Fall is for no-fuss recipes. I mean, with everything going on during the season, it’s always good to have quick, easy, and delicious recipes that you can mix up in one or two bowls, bake in less than an hour, and taste just as good as they look!
That was our inspiration behind this super simple Spiced Apple Cider Bourbon Bundt Cake.
Though, I will admit, getting this recipe just right wasn’t quite so simple.
It took three solid test bakes for us to get this cake perfect. The first test was, sadly, flavorless. It was sweet and…creamy? It definitely wasn’t what we were looking for at all. So, we completely changed the recipe.
The second test bake was with an oil-based cake and we added pretty much more of everything to give it some flavor. This cake was better, but our oil ratio was WAY off. The cake was rubbery and oily. It tasted good, but when you touched it, it literally left oil on your hands.
Our third test is where we finally got things right! We scaled back the oil slightly and adjusted our baking time and temperature. This resulted in the PERFECT cake.
It’s dense, but it’s still light and moist, flavorful, and really tastes like Fall! Plus, it’s so simple and it works wonderfully as a breakfast cake or even dessert.

Ingredients

- Fresh Apple Cider
- Large Eggs
- Vegetable Oil
- Bourbon
- All-Purpose Flour
- Brown Sugar
- Apple Pie Spice
- Baking Powder
- Baking Soda
- Salt
How To Make Apple Cider Bourbon Bundt Cake
Step 1: Combine
In a medium bowl, whisk together cider, eggs, oil, and bourbon. Set aside.
In a large bowl, whisk together flour, brown sugar, apple pie spice, baking powder, baking soda, and salt.
Pour wet ingredients over dry ingredients and whisk until smooth.
Step 2: Bake
Pour into prepared pan and bake for 40 minutes, or until cake tests done. Let cool in the pan.
Once the cake is cool, turn out onto cooling rack or cake plate.
How To Store
You can keep this cake covered, at room temperature, for about 1-2 days. Alternatively, you can keep it covered in the fridge for 5-7 days. Though, the absolute best way to store this cake is to freeze it! You can freeze the cake as a whole, or individual slices. Just be sure to cover it and it will keep for 1-2 months.
Substitutions
- You can use cinnamon instead of apple pie spice in this recipe!
- To make this recipe vegan, you can use your favorite vegan eggs (we personally love Just Egg!).

- 2 cups fresh apple cider
- 3 large eggs,, room temperature
- ⅔ cup vegetable oil
- ¼ cup bourbon
- 2 cups all purpose flour
- 1¼ cups brown sugar,, firmly packed
- 1½ teaspoons apple pie spice
- 1½ teaspoons baking powder
- ⅔ teaspoon baking soda
- ¾ teaspoon salt
Instructions
- Heat oven to 350 °F.
- Spray a 10-cup bundt pan with baking spray. Set aside.
- In a medium bowl, whisk together cider, eggs, oil, and bourbon. Set aside.
- In a large bowl, whisk together flour, brown sugar, apple pie spice, baking powder, baking soda, and salt.
- Pour wet ingredients over dry ingredients.
- Whisk until smooth.
- Pour into prepared pan.
