These Chocolate Chip Cookie Ice Cream Sandwiches are the homemade version of everyone’s favorite summertime treat…a chipwich! A super simple chocolate chip cookie that’s crispy on the edges, but soft in the middle, filled with vanilla bean ice cream, and rolled in mini chocolate chips after freezing. These ice cream sandwiches are a must-have treat to keep in your freezer all year long, but especially on hot days! Every bite is crunchy, sweet, chocolate-y, messy, and just SO. GOOD. There’s just so much to love here. Bonus? These sweet treats are something everyone will love!

About The Recipe

Ice cream sandwiches? In September? I know, I hear you. While almost everyone has moved on to Fall bakes (we’re getting there, promise), we decided to celebrate the last little bit of summer with these delicious Chocolate Chip Ice Cream Sandwich Cookies!

Well, that and…these are my birthday treat!

Yep, tomorrow is my 22nd birthday and, instead of a cake this year, I opted for one of my favorite childhood treats!

My mom used to make ice cream sandwiches every summer when I was growing up. It was something we always kept in the freezer. They were so special and it’s been FOREVER since the last time I had one! So, I asked my mom to make me some.

The recipe turned out so well that we just had to share it with all of you! These chocolate chip cookies might just be our best chocolate chip cookie recipe to date. They’re so simple and SO good. Plus, when they freeze, they are still soft enough to bite into!

Then, with creamy vanilla ice cream sandwiched between it? Oh. My. Gosh.

We couldn’t be happier with how they turned out! They’re the perfect treat to celebrate weekends, birthday’s, or just to cool off on a hot day! There’s nothing better!

What is a Chipwich?

A chipwich is a dessert that’s made from chocolate chip cookies and vanilla ice cream sandwiched in the middle. Then, they are rolled in mini chocolate chips! This recipe is our version of the classic dessert.

Equipment Needed

Ingredients

For The Cookies:

  • Salted Butter
  • Granulated Sugar
  • Brown Sugar
  • Large Egg
  • Egg Yolk
  • Vanilla Extract
  • All-Purpose Flour
  • Baking Soda

For The Filling:

  • Vanilla Ice Cream
  • Mini Chocolate Chips

How To Make Chocolate Chip Cookie Ice Cream Sandwiches

Step 1: Make the cookie dough

With an electric mixer, beat butter and sugars until light and fluffy, about 2-3 minutes.

Mix in egg and egg yolk.

Stir in vanilla.

Add flour and baking soda. Mix only to combine.

Stir in chocolate chips.

Step 2: Scoop and bake

Use a 3 Tablespoon scoop to portion dough onto prepared pans. Bake for 12 minutes, until lightly browned but still soft. Allow to cool on sheet pans.

Step 3: Assemble

Turn 7 cookies upside down on sheet pan. Place ½ cup ice cream on top of each upside down cookie. TOp with remaining 7 cookies.

Dip sides in chocolate chips. Freeze until hardened.

Variations

Looking for something a little different? Here are a few ways to change up this classic treat!

  • Use Funfetti Cookies instead of chocolate chip.
  • You can use almost any type of ice cream that will go well with chocolate chip cookies. I personally love using chocolate ice cream or coffee ice cream! For a boozy treat for adults, try using Irish Cream Ice Cream!
  • The sandwiches can be rolled in chocolate sprinkles, rainbow sprinkles, peanuts, or even chopped up candy bars.

How To Store Ice Cream Sandwiches

The most important thing is to keep them in the freezer! Once they’re assembled and set, these ice cream sandwiches can be stored in a freezer safe zip top bag and kept in the freezer for about 2-3 months.

Expert Tips

  • Do not over-mix the cookie dough!
  • Depending on how your oven bakes, if baking multiple pans at a time, be sure to check on the cookies at about 10 minutes into the bake time.
  • To achieve a perfectly round cookie, take a large round biscuit cutter and place around your cookie while it’s still hot. Move the cutter in a circular motion around the cookie to help re-shape it.
  • Don’t forget to line your sheet pans.
  • Be careful when assembling the ice cream sandwich! If you press too hard, you might break the top or bottom cookie.
  • Work quickly as the ice cream melts fast!
  • Keep the cookies on parchment paper when you freeze them.
  • If your ice cream is getting too soft/melting, freeze the ice cream sandwiches before rolling in chocolate chips.
  • Freeze times may vary. Anywhere from 1-3 hours.

Chocolate Chip Cookie Ice Cream Sandwiches

These Chocolate Chip Cookie Ice Cream Sandwiches are the perfect nostalgic treat for hot summer days! Every bite is perfectly sweet, extra chocolate-y, and SO. GOOD.

Ingredients
 

Cookies

  • ¾ cup salted butter, room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • ¾ teaspoon vanilla extract
  • cups all purpose flour*
  • ½ teaspoon baking soda
  • cups chocolate chips

Filling

  • Heat oven to 375°F.
  • Line 2 sheet pans with parchment paper. Set aside.

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
