Chocolate Ganache Heart Shaped Puff Pastry Hand Pies

This Valentine’s Day, ditch the traditional box of chocolates and whip up a batch of these Chocolate Ganache Heart Shaped Puff Pastry Hand Pies! They are the perfect blend of flaky, buttery pastry and rich, silky chocolate ganache, making them the perfect quick and easy dessert.

My mom and I are always looking for quick, easy dessert ideas, especially around any holiday. With Valentine’s, you automatically think hearts – so that was a given. Chocolate. Well…Valentine’s and chocolate is kind of a packaged deal!

And with today being Valentine’s Day, we wanted to share a recipe that was quick and easy to make, one that doesn’t take a whole lot of effort, but TASTES like you spent hours prepping and baking. Bonus? These cute little hand pies are essentially a super-quick and easy pain-au-chocolat (or chocolate croissant 😉)!

Go Ahead & Grab These Ingredients (You Don’t Need Much!)

  • Puff Pastry – Layers of flaky pastry that have a pleasant crunch when baked. The frozen puff pastry in your grocery store’s freezer section makes quick, easy work of this. All you have to do is flatten and cut.
  • Bittersweet Chocolate – Our go to for most things chocolate, bittersweet chocolate has a rich, complex flavor without being overly sweet. We used a 60% cacao content.
  • Heavy Cream – The higher fat content in heavy cream makes the ganache smooth and creamy, helps it set up properly, and acts as an emulsifier.

*TIP: We used a simple egg wash (1 large egg + 1 Tablespoon water) to seal these pies and to promote browning, but if you aren’t a fan, no worries! You can use heavy cream to seal the pies, as well as brush the exterior of them to help browning.

How To Make Heart Shaped Hand Pies (Step-by-Step!)

This is a pretty quick and simple recipe, but since sealing pies and making ganache can seem a bit tricky, we wanted share some step-by-step photos with instructions so you know exactly what to do every step of the way.

Step 1: Make the ganache

Combine chocolate and cream in a microwave safe bowl. Heat in 15 second bursts in the microwave, stirring well after each, until melted and smooth.

Cover with plastic wrap, making sure it is touching the surface of the chocolate. Refrigerate until solidified, about an hour.

Step 2: Cut out shapes & fill

Working with 1 sheet of puff pastry at a time, unfold onto work surface. Use a 3 inch cutter to cut out shapes. Repeat with second sheet of puff pastry.

Place half of the hearts on prepared pan. Top each with 1½ teaspoons chocolate, leaving ¼ inch border around the edge.

Brush borders with egg wash. Top with other half of hearts. Press to seal. (You can use a fork to make sure they are sealed all the way around.)

Step 3: Bake

Bake for 18 minutes, or until golden brown.

A Few Tips To Ensure Recipe Success

  • For a richer ganache flavor, use a bittersweet or dark chocolate with a higher cacao percentage.
  • Don’t overfill the hand pies, or the ganache will burst out during baking.
  • If you don’t have a heart-shaped cookie cutter, you can use any shape as long as it’s 3 inches x 3 inches.
  • Get creative with decorating! Use pink or red sanding sugar, chocolate drizzle, or edible glitter for an extra Valentine’s Day touch.

  • 1 large egg, room temperature
  • 1 Tablespoon water

Instructions

  • Line 2 sheet pans with parchment paper. Set aside.
  • Working with 1 sheet of puff pastry at a time, unfold onto work surface.
  • Flatten seams.
  • Use a 3 inch cutter to cut out shapes.
  • Repeat with second sheet of puff pastry.
  • Re-roll scraps, if desired.
  • Place half of the hearts on prepared pan.
  • Top each with 1½ teaspoons chocolate, leaving ¼ inch border around the edge.
  • Brush borders with egg wash.
  • Top with other half of hearts.
  • Press to seal. (You can use a fork to make sure they are sealed all the way around.)
  • Brush tops with egg wash.
  • Bake for 18 minutes, or until golden brown.

Notes + Tips!

How To Store:
These hand pies are best enjoyed as soon as they are made, but they can be kept in a zip-top bag and at room temperature for 2-3 days. You can also freeze them for up to 1 month.
 
Things To Keep In Mind:
  • This recipe yields 14 hand pies if you re-roll the scraps. If you choose to not re-roll the scraps, you will have 9 hand pies. Keep in mind, the hand pies made from the scraps will not puff as much as the others.
  • Room temperature is about 70℉.
  • Use an oven thermometer to ensure accurate cooking temperatures.
