You know when you’re really craving some coffee cake, but you don’t have the time for making an entire cake…well, that’s exactly where this little Coffee Cake Mug Cake comes in!
We kept the cake itself simple: a soft vanilla sour cream cake made with ingredients you probably already have in the kitchen. But the best part is the streusel. Instead of adding just a little to the top, we layer half of the brown sugar, cinnamon, and pecan mixture through the center of the batter and pile the rest on top.
The result is a warm, freshly made coffee cake with plenty of cinnamon streusel in every bite. And from start to finish, it only takes a few minutes to make!

Just a Handful of Simple Ingredients
One of the best things about this Coffee Cake Mug Cake is that there’s nothing complicated about it. The cake and cinnamon pecan streusel are both made with basic baking ingredients, and you only need a handful of them to put the whole thing together.
The cake gets its soft, tender texture from sour cream and vegetable oil, while brown sugar, cinnamon, and plenty of chopped pecans make up the streusel!

It’s All About The Streusel
For us, the best part of any coffee cake is the streusel, so we definitely didn’t skimp on it here! It’s a simple mixture of brown sugar, cinnamon, chopped pecans, a little flour, and a pinch of salt.
Whisk the brown sugar, flour, cinnamon, and salt together, then stir in the pecans. That’s all there is to it.

Coffee Cake In Just A Few Minutes
The cake batter is just as simple. Whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Add the egg, sour cream, vegetable oil, and vanilla, then whisk until smooth.


Now comes the part that makes this little cake so good! Spoon half of the batter into a 10-ounce mug and top it with half of the streusel. Add the rest of the batter, then pile the remaining streusel on top.
Layering the streusel through the middle gives you brown sugar, cinnamon, and pecans throughout the cake instead of saving all the good stuff for the top.


Microwave on high for 2 minutes, and you have a warm, freshly made coffee cake ready to enjoy.

We added a simple vanilla glaze for the photos, but this coffee cake really doesn’t need it. If you’d like to add one, just mix powdered sugar with a little milk and vanilla until it’s thin enough to drizzle over the top.

Cinnamon Pecan Coffee Cake Mug Cake
Ingredients
Streusel
- 2½ Tablespoons brown sugar, firmly packed
- ½ teaspoon all purpose flour
- ½ teaspoon ground cinnamon
- 1 pinch salt
- ¼ cup chopped pecans
Cake
- ¼ cup all purpose flour
- 1 Tablespoon granulated sugar
- 1 Tablespoon brown sugar, firmly packed
- ⅛ teaspoon baking powder
- 1/16 teaspoon baking soda
- 1/16 teaspoon salt
- 1 large egg, room temperature
- 2 Tablespoons sour cream
- 4 teaspoons vegetable oil
- 1¼ teaspoons vanilla extract
Instructions
Streusel
- Whisk brown sugar, flour, cinnamon, and salt together in a small bowl.
- Stir in pecans. Set aside.
Cake
- Whisk flour, granulated sugar, brown sugar, baking powder, baking soda, and salt together in a small bowl.
- Add egg, sour cream, vegetable oil, and vanilla.
- Whisk until smooth.
Assembly
- Spray a 10-ounce mug with baking spray.
- Spoon half of the cake batter into the mug.
- Top with half the streusel.
- Spoon the rest of the cake batter over the top of the streusel.
- Top with the rest of the streusel.
- Microwave on high power for 2 minutes.
