This Easy Brown Sugar and Cinnamon Peach Cobbler Crisp is the perfect sweet treat to make to enjoy all of your mid-summer peaches! A combination of two of our favorite desserts, this easy-to-make dessert is sure to be your new summer go-to. Sweet summer peaches mixed with brown sugar and cinnamon, topped with a cream-based brown sugar biscuit, and finished with a brown sugar and cinnamon streusel. Every bite is perfectly juicy, sweet, and bursting with flavor! If there’s only one peach recipe you make this summer, it needs to be this Peach Cobbler Crisp! So. GOOD.

About The Recipe

Last summer, my mom and I shared a revamped version of our classic Bourbon Peach Cobbler. So, this year, we knew we wanted to share something along those same lines. Though, we couldn’t really decide if we wanted to share a cobbler or a crisp…

So, we kinda combined both and created this peach cobbler crisp!

Though, it’s not really a true “crisp” as it doesn’t have oats or nuts. It’s really just a cinnamon streusel, but it does add the crunchy element (or…a crisp-y element 😉) in every bite!

We also really wanted to have brown sugar to be a consistent theme throughout this dessert. So, each element is actually sweetened with brown sugar.

We weren’t sure if it really was going to work, but the idea just sounded too good to pass up.

I mean, peaches, cinnamon, brown sugar…what could go wrong?!

Thankfully, absolutely nothing! This cobbler turned out so well on our first test bake that it was gone within the hour. Absolutely everyone loved it! The streusel just adds that extra bit of oomph to this cobbler, making it seriously addicting.

Each and every bite is juicy, full of sweet peaches, with just the right amount of crunch from the biscuit, as well as a gooey/crunchiness coming from the streusel.

I seriously can’t get enough!!

What’s The Difference Between a Crisp, Crumble, and Cobbler?

While all of these desserts are very similar, there are some differences! When it comes to crisps and crumbles they are, essentially, the same thing. Baked fruit with a crunchy topping. A crisp tends to have oats in the topping while a crumble does not.

Then, there’s cobbler! Yet another delicious baked fruit dessert, but totally in a league of its own. Instead of a crunchy topping comprising of butter, brown sugar, oats, etc. It typically has a biscuit-like topping or pie crust!

For this recipe, we chose to combine all of them and create a classic cobbler, but with the addition of a cinnamon streusel to make it even more delicious!

For The Streusel:

  • Brown Sugar – While traditional streusel uses a mix of granulated sugar and brown sugar, we opted to use only brown sugar to add more of a depth of flavor to compliment the peaches better.
  • All-Purpose Flour – Using flour in a streusel is essential, as it allows the streusel to hold it’s shape and keep from becoming like hard candy.
  • Ground Cinnamon –  Gives this streusel a delicious flavor.
  • Salted Butter – Remember to use room temperature butter for the streusel!

For The Filling:

  • Sliced Peaches – For the best flavor, it’s best to use fresh peaches!
  • Brown Sugar – Adds sweetness and flavor.
  • Cornstarch – Keeps the filling from being too juicy.
  • Ground Cinnamon – Just a dash of cinnamon compliments the flavor of the peaches!
  • Salt – Cuts some of the sweetness and enhances the flavor of the peahes.
  • Vanilla Extract – A splash of vanilla makes everything better.

For The Topping:

  • All-Purpose Flour – Gives this biscuit the perfect structure and texture.
  • Brown Sugar – Not only does brown sugar add sweetness, but it adds flavor and helps promote browning!
  • Baking Powder – This is what gives the biscuit topping some rise and gives the topping an airy and delicious texture.
  • Salted Butter – Creates flaky layers that make this topping irresistible!
  • Heavy Cream – Using cream makes for a rich and delicious biscuit!
  • Egg Yolk – Adds richness.
  • Vanilla Extract – A splash of vanilla gives the topping a little bit of flavor.

How To Make This Peach Cobbler Crisp

Step 1: Prepare streusel

In a small bowl, combine brown sugar, flour, cinnamon and butter. Use a pastry blender, a fork, or your fingers to mix until crumbly. Set aside.

Step 2: Mix filling

Combine all ingredients in a large bowl. Stir until peaches are thoroughly coated.

Pour into prepared pan. Set aside.

Step 3: Make topping

In a medium bowl, mix together flour, brown sugar, and baking powder.

Grate in butter. Lightly toss together until all butter is coated.

Whisk cream, egg yolk, and vanilla together in a small bowl.

Pour over flour mixture. Gently mix together until it forms a dough.

Step 4:Assemble and bake

Drop dough by spoonfuls on top of prepared filling. Sprinkle streusel on top. Bake for 40 minutes, or until golden brown and bubbly.

FAQ’s and Troubleshooting

Can frozen peaches be used?

Of course! Just make sure the peaches aren’t sweetened and they are completely thawed before mixing.

Why is the topping sticky?

It’s meant to be this way, don’t worry! We didn’t want a stiff biscuit as the topping, but something more buttery, flakey, and would melt a little bit as it baked.

Can I add other fruit?

If you want to add other fruit to this recipe, go ahead! We love the mix of peaches with blueberries and raspberries. Though, keep in mind, you may need to add a little bit more cornstarch.

How to know when the cobbler is done?

Visually, the best cue for a perfectly baked cobbler is a golden brown top and bubbling edges. If you’re unsure, you can use an instant read thermometer! A baked cobbler should read 200 degrees Fahrenheit in the thickest part of the topping (not the actual fruit filling!).

How To Store

You can easily keep this in the fridge. Just cover with plastic wrap or foil and it should keep about 4-7 days.

Substitutions

  • You can use frozen peaches for this recipe.
  • To make this cobbler vegan, use a vegan heavy whipping cream, your favorite vegan egg substitute (we like aquafaba) and your favorite plant-based butter.
  • To make this recipe gluten-free, use your favorite 1:1 gluten-free all-purpose flour blend.

Expert Tips

Enjoy the beast of peach season with this Brown Sugar and Cinnamon Peach Cobbler Crisp! Sweet and juicy peaches mixed with brown sugar and cinnamon, topped with a brown sugar biscuit, and cinnamon streusel. Every bite is just SO. GOOD.

Ingredients
 

Streusel

  • ¼ cup brown sugar, firmly packed
  • Tablespoons all purpose flour
  • ½ teaspoon ground cinnamon
  • Tablespoons salted butter, room temperature

Filling

  • 7 cups sliced peaches
  • ½ cup brown sugar, firmly packed
  • 5 Tablespoons corn starch
  • teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Topping

  • ½ cup all purpose flour*
  • 2 Tablespoons brown sugar, firmly packed
  • ¾ teaspoon baking powder
  • 2 Tablespoons salted butter, cold
  • ¼ cup heavy cream
  • 1 large egg yolk
  • ¼ teaspoon vanilla extract

Instructions
 

  • Heat oven to 350 °F.
  • Spray an 11 inch round pan with cooking spray. Set aside.

  • In a small bowl, combine brown sugar, flour, cinnamon, and butter.

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
