About The Recipe

Even though it’s only Wednesday, my mom and I are celebrating! This year, we set a goal that we wanted to achieve by the end of the year. Turns out, we achieved our goal in the first three months!

It might not sound like much, but this goal is something my mom and I have been trying to achieve since we started our blog.

To finally be here, well…we just had to share something special!

Honestly, it turned out so good that we’ve made this recipe twice in the last week. It’s sweet, creamy, ultra rich, with just the right amount of crunch coming from the sprinkles!

What Flavor is Birthday Cake Ice Cream?

While the idea sounds delicious, it can be pretty hard to actually pin-point what the flavor might actually be. Well, luckily for you, we got the answer!

Our birthday cake ice cream is flavored with cake batter extract and vanilla extract. The cake flavor a buttery and rich flavor to the ice cream, while the vanilla enhances and rounds out the flavor. Then, rainbow sprinkles are added to give it more of a celebratory feel!

Some people also add chunks of leftover vanilla cake or funfetti cake to the ice cream, which you can definitely do, if desired.

What Is No Churn Ice Cream?

A no churn ice cream is made with heavy cream and sweetened condensed milk. There are no custards to be made, no ice cream machines, nothing! It’s so simple, but so delicious. This version has vanilla, cake flavoring, and salt added to give the ice cream base some delicious flavors. In addition to that, we also added some rainbow sprinkles!

  • Heavy Cream – Heavy whipping cream is an essential ingredient for no churn ice cream! This is what makes the ice cream so light, fluffy, and oh-so creamy.
  • Sweetened Condensed Milk – Adds the perfect amount of sweetness, a little bit of flavor, and makes this ice cream perfectly scoopable!
  • Vanilla Extract – A splash of vanilla gives this ice cream a deliciously rounded flavor.
  • Cake Batter Flavor – This is what gives this ice cream it’s “birthday cake” flavoring! It adds a buttery richness that makes this ice cream simply irresponsible.
  • Salt – We added just a pinch of salt to help tone down some of the sweetness.
  • Sprinkles – You can use any sprinkles you like for this recipe! We personally like to use jimmies, as their colors don’t bleed when added to the mixture.

How To Make Birthday Cake Ice Cream

Step 1: Make the base

With an electric mixer, beat cream to medium stiff peaks.

Stir in condensed milk, vanilla, cake flavor, and salt.

Fold in sprinkles.

Step 2: Freeze

Spoon into 12 inch cake pan. Cover with plastic wrap. Freeze 4-6 hours, or until set.

FAQ’s & Troubleshooting

Do I have to use heavy cream?

For this recipe, heavy whipping cream is essential! Once it’s whipped, that’s how the ice cream becomes so light and fluffy.

Does no churn ice cream taste like normal ice cream?

To be honest, not really. While it’s very delicious, it is much sweeter than traditional ice cream. It also tastes like sweetened condensed milk, which works well for this recipe, but if you aren’t a fan of sweetened condensed milk, you should probably stick with traditional ice cream!

How long does it take for this ice cream to freeze?

Ours frozen in about 4-5ish hours. Though, it can take 8-12 hours, depending on how cold your freezer is.

Why is my ice cream still soft after freezing?

If your ice cream is still soft, it could be that your freezer isn’t cold enough. Also, if your pan isn’t pre-frozen, it may take longer for this ice cream to freeze than stated in the recipe card. The last thing could be that too much sweetened condensed milk may have been added.

Can I add leftover cake to this recipe?

Absolutely! If you have a basic flavored cake (vanilla cake, pound cake, or funfetti cake), you can chop it up and fold it in with the sprinkles. Just keep in mind that it may take longer to freeze.

There’s nothing better than a scoop of ice cream on a hot day…but when you have leftovers, sometimes you might wanna do something special. Here are a few of our favorite ways to change-up this ice cream and make a whole new dessert!

How To Store

Once this ice cream is frozen, you can keep it in cake or loaf pan, covered with plastic wrap, and in the freezer for 5-7 days. Though, we do recommend scooping it out and placing it in an ice cream container to really make it last! We found that, if using an ice cream container, the ice cream will last 2-3 weeks before ice crystals really start to form!
