About The Recipe
Happy summer, everyone!
Even though it’s been over 100 degrees here everyday for the past week or so, today is the first official day of summer. So, to celebrate, my mom and I wanted to share something near and dear to our hearts…fruit pizza!
This recipe is actually a version of one my grandmother used to make! It was a staple summer recipe for my mom growing up, as well as something my mom made for me and my brother when we were growing up.
It’s one of our absolute favorite desserts. But, to be completely honest, it’s been so long since we’ve made one!
We haven’t really thought about it since I was a kid. Though, with all the gorgeous fresh produce coming into our local farmer’s market, we just KNEW we had to make something that involved lots of fresh fruits and berries.
Which is how we came up with the idea of this fruit pizza! It’s honestly just been so long that my mom and I were beyond excited to mix this up.
So, one giant sugar cookie baked, it was time to frost and decorate! We topped it with our silky and rich cream cheese frosting recipe and a bunch of our favorite fruits and berries.
Though, what really completes this fruit pizza is just a light drizzle of honey. Every bite is soft, chewy, creamy, a touch tangy, fruity, and just SO. GOOD.
Whether you need a treat to celebrate the first day of summer, a summer holiday dessert the whole family is sure to love, or simply use up fresh summer produce, you need to make this delicious dessert pizza!

For The Crust:
- Unsalted Butter – We chose to use unsalted butter in this sugar cookie, as it gives us more control over how much salt actually goes into the recipe!
- Granulated Sugar – Not only does sugar sweeten this cookie, but it also ensures crisp edges and chewy center cookie.
- Large Egg – Remember to let the egg come to room temperature before beginning to mix the cookie dough.
- Vanilla Extract – Just a splash because everything is better with some vanilla!
- All-Purpose Flour – No need for anything special. All-purpose flour is the perfect flour for this recipe!
- Baking Soda – Adds just the right amount of lift to this cookies, while also creating a chewier texture.
- Salt – Helps cut some of the sweetness, while also enhancing the flavor.
For The Frosting:
- Heavy Cream – This is our secret to our no-fail cream cheese frosting! Using whipped cream helps keep the frosting stabilized and less likely to melt.
- Cream Cheese – Makes this frosting irresistibly rich and tangy!
- Salt – Cuts the sweetness slightly.
- Powdered Sugar – Gives this frosting the perfect amount of sweetness, while also making it the perfect consistency.
- Vanilla Extract – Just a splash to give this frosting the best-ever flavor!

FAQ’s and Troubleshooting
Can I use a different cookie dough?
Absolutely! You could use chocolate chip, peanut butter, or even oatmeal raisin! Though, you may want to use different fruits and toppings to compliment the more complex flavors of cookie dough.
Can I make this recipe without a pizza pan?
No pizza pan? No problem! Instead of pressing into a pizza pan, you can press the cookie dough into two round 6 inch cake pans or into a 8×12 inch baking pan. Keep in mind the bake time may need to be adjusted if a 14 inch pizza pan is not used.
Why is my crust tough?
If the cookie crust is tough, that means the cookie dough was over-mixed or over worked when pressing it into the pan.
Why is my crust dry?
If the cookie is dry, it may have become over baked. Depending on the thickness and the type of pan used, the bake time may need to be adjusted.

Regarding Fruit Pizza, could you substitute a refrigerated roll of cookie dough purchased from your local grocery store?
Hi Brenda! While we’ve not tested this, it should theoretically work. Though, we cannot guarantee baking times. Be sure to read the packaging on the store-bought cookie dough! Hope this helps. x, Caylie
