Out of all our summer desserts and 4th of July treats, fruit pizza is usually our go-to for when we need a dessert that is SURE to be a crowd fave! I mean, what could be better than the combination of a soft, buttery sugar cookie crust with tangy cream cheese frosting and fresh fruit?!

6 Ingredient Sugar Cookie Crust

There’s no pizza dough or pie crust to make for this recipe! This pizza’s crust is made from our classic sugar cookie recipe. Each bite is soft and chewy in the center with the edges being just slightly crisp. Bonus? It’s really easy to make!

You’ll need the regular sugar cookie ingredients: butter, sugar, egg, vanilla, flour, baking powder.

You Only Need One Bowl!

The easy dough comes together easily with just a hand mixer. The dough may be a little drier than you’re used to, especially if you’ve made our M&M Cookies before. This was intentional! We wanted the dough to be a little drier than a traditional cut-out sugar cookie to make it easier to handle/press into the pizza pan.

A Few Cookie FAQs

  1. Can I use a different cookie dough for the crust? Absolutely! As a kid, I LOVED a fruit pizza made with a chocolate chip cookie crust. You could also try making a s’mores pizza (another childhood fav of mine!) with our s’mores bars. From peanut butter cookies, to fudge brownie cookies, to gingerbread cookies, the options are never-ending!
  2. Can I make this without a pizza pan? A pizza pan is definitely not necessary for this recipe. You can use a regular sheet pan to make the full 14 inch pizza or try making two pizzas with 6 inch or 8 inch cake pans!

No Fail Cream Cheese Frosting

Instead of using a classic cream cheese frosting, we opted to use our no-fail cream cheese frosting! It has the addition of whipped cream to create a lighter, fluffier texture that also helps stabilize it. Luckily, all you need are the classic cream cheese frosting ingredients (cream cheese, powdered sugar, and vanilla) with the addition of heavy whipping cream.

What Are The Best Fruits For Fruit Pizza?

Fruit pizzas can be topped with almost anything! Though, there are definitely better fruits to use than others. Here’s a quick list of some of our best recommendations (and some we suggest not to use!).

  • Strawberries, blueberries, blackberries, raspberries
  • Grapes, cherries
  • Peaches, apples, nectarines, plums
  • Kiwis
  • Mangoes
  • Dragonfruit

Fruits we suggest avoiding: Watermelon, oranges, pineapple, and grapefruit. These fruits have a high water content and may cause a soggy pizza!

Make sure that whatever fruit you use, you cut it into thin, bite-size pieces. When you slice the pizza, the smaller pieces are easier to serve (and eat 😉).

Decorating Ideas

The great thing about this pizza is that it’s literally a blank canvas! You can decorate it however you wish. Here are a few patterns/ideas you can make:

  • Rainbow – A rainbow pattern can be achieved easily by creating a stripe of each individual color!
  • Flower – A simple flower pattern can be created by making circles of sliced strawberries, starting with a small circle in the middle and making larger circles as you make your way towards the edges.
  • Sun/Starburst – Use all of your favorite yellow and orange fruits to create a sun or star shape!
  • Faces or Animals – Create funny faces atop this fruit pizza or try your hand at creating one of your favorite animals! From tigers to butterflies, each one could add a beautiful design to this pizza.
  • Cutout Shapes – Feeling creative? You can use cookie cutters to create cute patterns or shapes out of the fruits.
  • Flag – Celebrating the Fourth of July? Use red and blue fruits/berries to recreate the American flag for a tasty treat!

Easy Fruit Pizza Recipe with Sugar Cookie Crust

Sweet and delicious Fruit Pizza…aka everyone's favorite summertime dessert! A soft and chewy sugar cookie crust, topped with the silkiest cream cheese frosting, and finished with all of your favorite in-season fruits and berries. It's SO simple, but SO good!
Prep Time: 45 minutes
Cook Time: 15 minutes
Total Time: 1 hour
Servings: 8 slices

Ingredients
 

Crust

  • cup unsalted butter, room temperature
  • cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • cups all purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Cream Cheese Topping

  • ½ cup cream cheese, slightly chilled
  • ¾ cup powdered sugar, sifted
  • 1 cup heavy cream, cold
  • teaspoons vanilla extract

Fruit Topping

  • 1 small mango, thinly sliced
  • 1 kiwi, thinly sliced
  • 6 medium strawberries, thinly sliced
  • ¼ cup blueberries
  • ¼ cup raspberries
  • ¼ cup blackberries
  • ½ large dragon fruit, thinly sliced
  • drizzle honey, optional

Instructions
 

Crust

  • Heat oven to 350℉/175℃.
  • Spray a 14-inch pizza pan with baking spray. Set aside.
  • With an electric mixer, beat butter and sugar until light and fluffy.
  • Beat in egg and vanilla.
  • Add flour, baking soda, and salt.
  • Mix only to blend.
  • Press dough into prepared pizza pan.
  • Bake for 12-15 minutes, or until edges are starting to brown.
  • Set aside to cool.

Cream Cheese Topping

  • Beat cream cheese and powdered sugar until smooth.
  • Add heavy cream and vanilla.
  • Beat until light and fluffy.
  • Spread evenly on cooled crust leaving a 1 inch rim around the edge.
  • Top with prepared fruit.
  • Drizzle with honey, if desired.

Notes + Tips!

Storing Your Fruit Pizza:
This fruit pizza is best enjoyed fresh, but we understand there might be leftovers! Here’s how to store it:
  • Assembled Pizza: For the freshest flavor and texture, store leftover assembled fruit pizza in the refrigerator for up to 2 days. The crust will soften as it sits with the fruit, so keep that in mind.
  • Separate Storage: For the crispiest crust, consider storing the unfrosted cookie crust at room temperature in an airtight container for up to 1 day. Then, frost and add fruit just before serving. The fruit itself can be stored, prepped and chopped, in the refrigerator in an airtight container for up to 2 days.
 
A Few Tips:
  • Room temperature is about 70℉/21℃.
  • To substitute salted butter for the unsalted, reduce the salt to ⅛ teaspoon.
  • Be careful to not over-mix your cookie dough!
  • Depending on the type of pan used and the thickness of your crust, your bake time may vary. Keep an eye on it while it bakes!
  • Make sure the cream cheese and powdered sugar are thoroughly beaten and smooth before adding the heavy cream and vanilla.
  • The fruits added on top and the pattern is totally up to you!

  1. Regarding Fruit Pizza, could you substitute a refrigerated roll of cookie dough purchased from your local grocery store?

    1. Hi Brenda! While we’ve not tested this, it should theoretically work. Though, we cannot guarantee baking times. Be sure to read the packaging on the store-bought cookie dough! Hope this helps. x, Caylie
