Whether you’re trying to catch the Easter Bunny or simply want a delicious treat, this White Chocolate Popcorn and Chex Easter Snack Mix (aka Bunny Bait!) is the easy no-bake snack you need! It’s kind of like the classic sweet Chex Mix, but with white chocolate and lots of fun mix-ins. It’s not only oh-so cute, but it’s SO easy to mix up. Made with plain popcorn, Chex and Cheerios cereal, crunchy pretzels, pastel M&M’s, roasted peanuts, and lots of pastel sprinkles! Each bite of this adorable mix is extra sweet, crunchy, and seriously addicting. Truly perfectly for Easter snacking!

About The Recipe

I feel like this year is just FLYING by! Is that just me? I mean, how is Easter literally this weekend? My mom and I have had so many ideas for Easter treats, but with it coming up so soon, we wanted to keep things as simple as possible.

Though, we weren’t exactly what to do in terms of “super simple”. That is, until we went to the store the other day! We kept seeing Bunny Bait everywhere.

Though, I’ll be honest, we didn’t exactly know what bunny bait was. We read the back of a few different labels and found that there was no real consistency.

So, when we got home (after buying some Easter M&M’s, of course!), we went through our pantry to find the best ingredients to create the ultimate snack mix.

If you didn’t know, my family and I are total snackers. We love everything that has to do with snacks. So, the things we always have on hand are plain popcorn, pretzels, roasted peanuts, plain cereals (such-as Chex and Cheerios!).

So, this recipe is kind of a mix between muddy buddies and your regular Chex mix.

Though, the flavor is where this recipe differs. It creates a deliciously sweet treat that is perfect for kids and adults alike!

Every bite is crunchy, sweet, a such salty, a little nutty, and extra chocolate-y.

It’s the perfect treat to have out as a snack, place in baggies for gifs, or simply leave out for the Easter Bunny!

What is Bunny Bait?

Bunny Bait is a delicious springtime snack mix! Our recipe is made with popcorn, chex cereal, cheerios, pretzels, peanuts, Easter M&M’s, pastel sprinkles, and lots of white chocolate.

While the Easter Bunny loves carrots, it’s said that they are also is attracted to pastel colors and extra sweet treats! Be sure to leave this snack out for Easter to give the Easter Bunny a pleasant (and delicious!) surprise.

Equipment Needed

  • Mixing Bowl
  • Rubber Spatula
  • Sheet Pan
  • Parchment Paper

Ingredients

(Full ingredient amounts and instructions can be found in the recipe card at the bottom of the post)

  • Plain Popcorn – You can buy plain popcorn from the store or pop your own with a hot air popcorn popper!
  • Mini Pretzels – I used pretzel twists and pretzel sticks for this recipe, just because I wanted some fun shape variation. You can really use whatever shape you like best!
  • Rice Chex Cereal – Make sure to use plain rice Chex.
  • Cheerios Cereal – For this snack mix, we recommend using plain Cheerios for the best flavor.
  • Roasted, Lightly Salted Peanuts – This is essential! Not only does using roasted peanuts intensify the nutty flavor, but the lightly salted helps balance out some of the sweetness.
  • White Chocolate – Use a high quality white chocolate for the best flavor!
  • Vegetable Oil – This is to help melt the white chocolate evenly and keep it fro seizing while it heats.
  • Pastel Sprinkles – Adds a cute pop of color to the mix!
  • Pastel M&M’s – Aka Easter M&M’s! Not only do these add a seasonal pop of color, but it also adds an extra bite of chocolate with every handful. YUM!

How To Make Bunny Bait

Step 1: Mix

In a large bowl, combine popcorn, pretzels, Rice Chex, Cheerios, and roasted peanuts. Mix well.

Spread in prepared pan.

Step 2: Melt and coat

Place chocolate and oil in microwave safe bowl. Microwave in 15 second increments, stirring well after each, until melted and smooth.

Pour over popcorn mixture. Stir to coat.

Top with sprinkles. Allow to harden.

Step 3: Break and mix

Break up into large mixing bowl.

Add M&M’s and mix.

How To Store

Once this snack mix is made, you can keep it in an airtight container or zip-top bag and keep at room temperature for up to a week.

Substitutions

  • To make this recipe vegan, you can use your favorite vegan white chocolate.
  • For a little extra flavor, use coconut oil instead of vegetable oil to melt the white chocolate!
  • Not a fan of peanuts? No worries! You can swap them for your favorite nut or leave them.
  • Almost anything can be added/taken out of this mix to make it more suitable to your tastes.
  • Try adding some chocolate robins eggs instead of M&M’s or even add some mini marshmallows to this mixture!

Ingredients

  • 4 cups plain popcorn
  • 2 cups mini pretzels
  • 2 cups Rice Chex cereal
  • cups Cheerios cereal

  • Tablespoons vegetable oil
  • 2 Tablespoons pastel sprinkles
  • 2 cups pastel M&M's

  • Line sheet pan with parchment paper. Set aside.
