Apple Pie Crumble Bars

Super simple Apple Pie Crumble Bars. These bars are seriously apple-filled, extra jammy, cinnamon-y, and oh so delicious. They are definitely a necessary bake this Fall! The base is only a simple oatmeal and butter crumble dough that has been sweetened with brown sugar. The filling is the best part though! Hints of cinnamon, allspice, and nutmeg run throughout with delicious bursts of freshly chopped apples…SO. GOOD. The final layer of this treat is that same delicious and buttery crumb that’s sprinkled on top, creating the ultimate Autumn bake. Once everything is baked together, you will have an apple crumble bar that’s buttery, perfectly sweet, cinnamon-y, and absolutely layered with flavor. It’s like eating your favorite slice of warm apple pie, just so much easier to make! Oh, and when you finish them with a simple vanilla drizzle… There’s nothing better.

I think all Monday’s are made better with something sweet, don’t you think? Especially when it’s Fall and there are so many delicious apples to be baking with!

It’s actually a little funny because…most of the time, all I wanna to do this time of year is bake with pumpkin. Pumpkin Pie Bars, Pumpkin Scones, Pumpkin Bread… The list goes on! But every now and again, my apple craving totally kicks in. Now is definitely one of those times!

And, I am so excited to be sharing these bars today! Me and my mom have been bouncing this idea around for weeks! So, today is the day we finally made up a new batch of our super easy apple pie filling and baked up these bars!

They are SUPER simple, require minimal ingredients, are buttery, perfectly spiced, and perfectly Fall!

Every bite has all your favorite elements of an apple pie, just made in half the time, and no finicky pie crust to deal with.

It’s a win-win.

Not to mention, these bars are gonna be a total hit at any get-together! They are perfect for Thanksgiving dinner…or even Christmas!

Seriously, every bite is melt-in-your-mouth delicious. I can’t think of a better or easier way to celebrate the leaves changing and cold days ahead!

Equipment Needed

Ingredients

  • All-Purpose Flour
  • Old Fashioned Oats
  • Brown Sugar
  • Cinnamon
  • Salt
  • Unsalted Butter
  • Apple Pie Filling

Instructions

In the largest bowl of the food processor, combine the flour, oats, brown sugar, cinnamon, and salt.

Add butter a little at a time, pulsing in between each addition.

Transfer about 2/3rds of the crumble dough into a greased baking pan. Press down evenly. Bake at 350 for about 15 minutes, or until the dough starts to brown.

Spread the apple pie filling evenly over the base layer. Crumble the remaining amount of dough from earlier on top. Bake again for 40 minutes.

Let cool in the pan. Run a knife along the edges before using a cookie spatula to lift it from the pan. Set on a cutting board and cut into nine squares.

How To Store

The best thing about these bars is that you can easily store them in a sealable bag and store them in the fridge for about a week. You can also keep them freezer! Just remember to let thaw, or reheat in the microwave!

Substitutions

  • You can use your favorite vegan butter to make this a delicious vegan treat!
  • Apple Butter can be used in place of apple pie filling. You just may need to decrease the amount a little.
  • You could also use your favorite store-bought apple pie filling!

Expert Tips

  • Try and keep the layers thin! The thicker the layers of crumble and filling, the longer it’ll take to cook, and the more difficult it is for it to set.
  • Get the base as level as you can. You can use your hand to press it down, or just any flat kitchen tool.
  • This recipe keeps really well!
  • The glaze is optional, but totally recommended.

Apple Pie Crumble Bars

Simple, easy, and delicious! These Apple Pie Crumble Bars taste just like a warm slice of your favorite pie. SO. GOOD.

Cook Time: 55 minutes
Total Time: 1 hour 10 minutes

Ingredients
 

  • 1 cup all purpose flour
  • 1 cup old fashioned oats
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter,, sliced
  • 1 ½ cups apple pie filling

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray an 8 inch square pan with cooking spray. Set aside.
  • In the bowl of a food processor, combine flour, oats, brown sugar, cinnamon, and salt. Pulse to combine.
  • Add butter slices, a few at a time, pulsing after each addition.
  • Pulse until combined and crumbly.
  • Place 2/3 of mixture into prepared pan, and press evenly in bottom.
  • Bake for 15 minutes, or until just starting to brown.
  • Remove from oven and top with apple pie filling and remaining crumble mixture.
  • Return to oven and bake 40 minutes, until lightly browned.
