- Totally nostalgic. I’m sure we all remember the brownies we used to get during school lunch. These brownies are similar, just SO much better!
- Easy to make. Plus, it tastes SO much better than any box mix (and it’s just as easy!).

- One bowl. You really only need one bowl to mix up these brownies!
- Customizable. Want to add nuts, chocolate chips, or a different frosting flavor? Feel free to experiment and create your own unique version.

What’s The Best Chocolate To Use In Brownies?
Some brownie recipes may call for a combination of cocoa powder and chocolate like our peppermint brownies, this recipe uses only pure melted dark chocolate for an intensely chocolatey flavor unlike any other.
You can use bittersweet chocolate (60% cacao) chips for this recipe, just be sure that they are pure chocolate like these Ghirardelli premium baking chips! You can also chop up a few 4-ounce (113g) chocolate baking bars that you find in the baking aisle of most grocery stores. Semi-sweet (56% cacao) chocolate will also work for this recipe!

So, what else do we need? Well, it’s actually simple! Just gather the remaining ingredients:
- Butter: Adds flavor and keeps the brownies moist.
- Eggs: Just like in our flourless chocolate cake, eggs bind, add richness, tenderize, and provide that perfect dense, yet light structure.
- Sugar – Sugar does much more than sweeten! It contributes to that fudgy, delicious structure, creates that signature crinkle top, adds moisture, + more!
- Salt + Vanilla: Contributes to and enhances the flavor of the brownies.
- Flour – For the perfect brownie, we actually use only 1 cup of flour. The more flour in a brownie recipe, the cakier they will be. So, this minimal amount of flour ensures the fudgy deliciousness that we all know and love!
Recipe Testing Notes For These Brownies ♡
Chocolate: As noted in the printable recipe card below, we recommend using bittersweet chocolate for this recipe. This provides a richer, more intense chocolate flavor without adding too much sweetness. If a sweeter chocolate is used, the brownies will be much too sweet (especially after they’re frosted!).
Use a mixing bowl: For the longest time, we only made our brownies with an electric mixer. We would beat the eggs and sugar for 10 minutes to create air to add lift (as there’s no leavening in brownies). We found through recipe testing that this step is actually unnecessary and the eggs provide enough lift on their own without the excessive whipping!
Less flour = fudgier brownies: You know when you bite into a brownie and it’s more cake-like than brownie? Well, that’s due to the amount of flour used in the recipe. We found that, for this recipe particular, about 1 cup of flour yields just enough structure while keeping the brownie extra fudgy.
Overview: Making The Fudgiest Brownies
Brownies are one of the easiest recipes to make. Begin by melting the chocolate and butter together in a microwave safe bowl. Then, once melted, whisk together eggs, sugar, and vanilla in a separate bowl. Mix in the melted chocolate and stir in the flour. Be careful to not over mix!
Now, all that’s left to do is bake. It’s so simple, but SO good!


The Best Frosting To Use For Brownies
When we typically frost brownies, we will use a ganache like we did with our cosmic brownies. Though with this recipe, we wanted to use a proper frosting like our creamy chocolate buttercream!
It’s a simple recipe (only 5 ingredients!). Plus, all you need is a bowl and a hand mixer. Just dump into a bowl and beat until light and fluffy.


Now, here’s the thing: These brownies MUST be cool before you frost them. I know, there is nothing better than a warm brownie, but if these brownies are frosted while they are still warm then the frosting is going to melt off. It’ll be worth the wait, I promise!

Fudgy Frosted Brownies
Ingredients
Brownies
- 2¼ cups chocolate chips
- ½ cup unsalted butter
- 4 large eggs, room temperature
- 1 cup granulated sugar
- ¼ teaspoon salt
- 2 teaspoons vanilla extract
- 1 cup all purpose flour
Frosting
- 2 cups powdered sugar, sifted
- ½ cup natural process cocoa powder, sifted
- 6 Tablespoons salted butter, room temperature
- ⅓ cup whole milk, room temperature
- 1 teaspoon vanilla extract
Instructions
Brownies
- Heat oven to 350℉/177℃.
- Line a 9-inch pan with parchment paper. Set aside.
- Combine chocolate chips and butter in a microwave safe bowl.
- Microwave in 15-second increments, stirring well after each, until melted and smooth. Set aside.
- In a large bowl, stir eggs, sugar, salt, and vanilla until well combined.
- Mix in chocolate mixture.
- Stir in flour.
- Pour into prepared pan.
- Bake 25 minutes, or to desired degree of doneness.
- Cool before lifting out of pan.
Frosting
- In a medium bowl, whisk powdered sugar and cocoa powder together.
- With an electric mixer, cream butter.
- Add cocoa mixture alternately with milk.
- Add vanilla.
- Beat until smooth and fluffy.
- Spread on top of cooled brownies.

- Refrigerated: To keep them a little longer, place brownies in an airtight container or zip-top bag. Refrigerate for up to a week. Remember that refrigeration will make the brownies a little more firm than fresh baked.
- Frozen: For longer storage, wrap the entire cooled pan or individual brownie slices tightly in plastic wrap, then place in a freezer safe container or zip-top bag. Freeze for up to 3 months.

- Don’t overbake:
- Use room temperature eggs: This helps create a better texture and incorporate air into the batter.
- Avoid overmixing: Overmixing can lead to tough brownies. Mix just until combined.
