One of our favorite things about this recipe is how adaptable it is. You can use any kind of chocolate you like—milk, dark, or even chopped bars. Homemade fluff? Absolutely. Want to go gluten-free or make a smaller batch? We’ve got all of that covered in the recipe notes.

The only thing we recommend keeping constant? Letting the bars cool before slicing. It’s tempting to dig in while they’re warm (and trust us, we’ve done it), but giving them time to set ensures clean slices and a perfect texture. If the marshmallow sticks to your knife, just run it under warm water or wipe it clean between cuts.

Whether you’re packing them for a picnic, making dessert for a birthday party, or just baking something sweet on a weekend afternoon, these bars always get rave reviews.

How to Make S’mores Cookie Bars

Making these cookie bars couldn’t be any easier. Start by melting your butter and letting it cool slightly—this gives the dough that perfect chewy texture!

Mix in brown sugar, granulated sugar, eggs, and vanilla until smooth. Then stir in the flour, graham cracker crumbs, baking soda, and chocolate chips until everything is just combined.

Press most of the dough into a parchment-lined baking pan. Spread a generous layer of marshmallow fluff across the top, then crumble the rest of the dough over the fluff.

It’s fine if some of the marshmallow peeks through—those little pockets get perfectly golden and gooey as it bakes.

Bake until the top is lightly browned and set, then let the bars cool completely before slicing. That’s it!

Ingredients
 

  • cup salted butter, melted
  • ½ cup granulated sugar
  • ¾ cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • cups graham cracker crumbs
  • ½ teaspoon baking soda
  • 1-1½ cups bittersweet chocolate chips
  • 1 jar marshmallow fluff

Instructions
 

  • Heat oven to 350℉/175℃.
  • Line an 8-inch square pan with parchment paper. Set aside.
  • In a large bowl, whisk butter and sugars together.
  • Whisk in eggs and vanilla.
  • Stir in flour, graham cracker crumbs, and baking soda.
  • Fold in chocolate chips.
  • Evenly press about ⅔ of cookie dough in prepared pan.
  • Spread marshmallow fluff over top.
  • Sprinkle remaining cookie dough on top.
  • Press down gently.
  • Bake for 35 minutes, or until golden brown and cooked through.

Notes + Tips!

Storing These S’mores Bars:
These S’mores Cookie Bars are incredibly delicious, but they won’t last long! Here’s how to store them for future enjoyment:
  • Refrigerator: For longer storage, you can store the bars in an airtight container in the refrigerator for up to a week. The bars will firm up a bit when chilled, but they can be enjoyed cold or warmed up slightly in the microwave.
  • Freezing: S’mores Cookie Bars freeze well! Let the bars cool completely, then slice them and wrap them individually in plastic wrap. Place the wrapped bars in a freezer-safe container or zip-lock bag. Frozen bars will keep for up to 3 months. Thaw overnight in the refrigerator or at room temperature before enjoying.
 
Additional Tips:
  • When freezing individual bars, consider placing a small sheet of parchment paper between them to prevent sticking.
  • Frozen bars can be enjoyed cold straight from the freezer, or you can warm them up for a gooey, fresh-baked experience. Pop a frozen bar in the microwave for a few seconds on low power, or warm it up in a preheated oven at 350°F for a few minutes. Keep an eye on it to avoid overdoing it!
  • Room temperature is about 70℉.
  • 1 1/4 cups graham cracker crumbs = 8 graham cracker sheets
  • Use an oven thermometer to ensure accurate cooking temperatures.

    • Use vegan butter and substitute the eggs with a flax egg (2 tablespoons ground flaxseed mixed with 6 tablespoons water, let sit for 5 minutes) or aquafaba.
    • Ensure the chocolate chips are vegan-friendly.
    • Use vegan marshmallow fluff or a homemade vegan version.
  • Dairy-Free:
    • Use dairy-free butter or vegan butter.
    • Opt for dairy-free chocolate chips.
    • Use dairy-free store-bought marshmallow fluff or a homemade vegan version.
  • Gluten-Free
    • Substitute all-purpose flour with your favorite 1:1 gluten-free flour blend.
    • Use store-bought gluten-free graham crackers or a homemade gluten-free version
 
Additional Ideas:
  • Chocolate: One of my favorite things is to change up my chocolate in s’mores! We used dark chocolate chips in this recipe, but you can use milk chocolate. You can also use chopped candy bars such-as peanut butter cups or snickers bars!
  • Nuts: For a nutty twist, add chopped peanuts, pecans, or walnuts to the cookie dough (about ½ cup).
  • Spices: Add a pinch of ground cinnamon or nutmeg to the cookie dough for a warm, cozy flavor.
  • Pretzels: Crush some pretzels and sprinkle them on top of the cookie dough before baking for a salty-sweet combination.
