Gooey S’mores Chocolate Chip Cookie Bars

Make your day a little sweeter with these S’mores Cookie Bars! Thick and chewy chocolate chip cookie dough, mixed with graham cracker crumbs, dark chocolate chips, and filled with gooey marshmallow fluff. It’s every bit as good as a homemade s’more, but now in cookie bar form!
If you’ve been on our blog before, you’ll know my mom and I are huge s’mores fans. We LOVE reinventing the classic treat, especially with homemade marshmallow fluff! Recipes like our decadent s’mores pie, our sweet breakfast treat s’mores cinnamon rolls, and even our chilly s’mores icebox cake are reader-favorites (as well as ours!) for a reason.
These ooey-gooey cookie bars are no different! They’re everything you love about the sticky treat, but made less messy and into a thick bar cookie. I mean, what’s not to love?!
Why You Can Trust This Recipe
I’m sure you’ve run across websites proclaiming to have “the best ever” or maybe even “the easiest” recipe on the internet. There are so many out there that it can be overwhelming and hard to choose because…how do you know if it’s actually the best? Well, while I may not proclaim that this is the best-ever s’mores cookie bar (even though they ARE very delicious), I can confidently tell you why you can trust us and our recipes.
- 40+ years of combined experience. My mom, Traci, is a highly acclaimed recipe developer and chef/baker. I was raised in her kitchen and learned from the best. Together, we have a combined 40+ years in the kitchen and have made everything from no-bake energy bites to pâte à choux.

4 Layers of Goodness In Every Bite
These bars aren’t just your average cookie bar. There are three layers to each bite that is sure to leave you wanting more.
- Chewy, buttery brown sugar cookie.
- Dark chocolate chips.
- Gooey marshmallow fluff.
- Even MORE cookie.
The Key Ingredients In These S’mores Cookie Bars
- Salted Butter – Adds richness, tenderness, flavor, and structure, and eliminates the need for additional salt in this recipe.
- Granulated Sugar – Sweetens and contributes to the structure and texture.
- Brown Sugar – Creates moist, chewy cookies.
- Eggs – Binders that also contribute to tenderness.
- Vanilla Extract – Adds a subtle undertone that really brings these bars to life.
- All Purpose Flour – Using plain all purpose flour is the way to go here. The protein content gives the dough the structure it needs.
- Graham Cracker Crumbs – A key ingredient in s’mores. We used whole sheets and processed them down to chunky crumbs to add a little texture.
- Baking Soda – Gives these bars just a little bit of lift, while neutralizing the acid in the brown sugar.
- Bittersweet Chocolate Chips – We used Hershey’s Special Dark Baking Chips for 2 reasons. 1. They’re Hershey’s, which is the iconic chocolate bar to use in s’mores. 2. We like the darker, richer flavor of bittersweet chocolate.
- Marshmallow Fluff – Homemade is always the best. But if you are short on time, Jet-Puffed is our favorite for a fast, easy alternative.
Make The Cookie Dough (Did I Mention There’s No Dough Chilling?)
Unlike most cookie doughs, this one is SO simple and requires no specialty equipment (I.E. electric mixers). All you have to do is whisk the wet ingredients together in a large bowl, mix in the dry ingredients, then fold in the chocolate chips. It’s that simple!

Remember to set your eggs out ahead of time (they need to be room temperature before mixing) and melt the butter first to allow it time to cool while you gather the rest of your ingredients!
Size Matters! (But Not In The Way That You Think)
Earlier I mentioned we had tested different pans to bake these cookies in. We originally wrote/tested this recipe for a 9×13 because we wanted LOTS of goodness for you to share with your loved ones. We quickly found out that, no matter what we did, we could never get the cookies to bake all the way through. The only way to get these cookies thoroughly baked is by following the recipe as-written in an 8 inch pan!
Layer In The Pan
This is the trickiest part of the whole recipe! Luckily, it’s actually not very difficult. Spoon out about ⅔ of the cookie dough (it doesn’t need to be exact!) and press it evenly into the bottom of your prepared pan. Spread the marshmallow fluff across the cookie dough. Then, crumble the remaining cookie dough over the top.
A Quick Tip: Line the pan with parchment paper, leaving some overhang. Once the bars are cooled, simply lift them out using the parchment overhang. Set it onto a cutting board and slice!
How Do I Know When These Cookies Are Done?
During testing and development, we found that the best way to determine if the cookies were done was actually by color! Testing with an instant read thermometer or a cake tester are pretty much useless, as the marshmallow layer prevents an accurate temp/test.
When the top layer of the cookie is a golden brown all the way around the edges, as well as in the middle, your cookies will be done. Use the photo below as a guide to help you determine if your cookies are done! In our electric oven, we found that 35 minutes at 350℉ provided a crisp exterior and cooked through with just enough gooeyness to give every bite a brownie-like mouthfeel.

Gooey S’mores Chocolate Chip Cookie Bars
Ingredients
- ⅞ cup salted butter, melted
- ½ cup granulated sugar
- ¾ cup brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups all purpose flour*
- 1¼ cups graham cracker crumbs
- ½ teaspoon baking soda
- 1-1½ cups bittersweet chocolate chips
- 1 jar marshmallow fluff
Instructions
- Heat oven to 350℉.
- Line an 8 inch square pan with parchment paper. Set aside.
- In a large bowl, whisk butter and sugars together.
- Whisk in eggs and vanilla.
- Stir in flour, graham cracker crumbs, and baking soda.
- Fold in chocolate chips.
- Evenly press about ⅔ of cookie dough in prepared pan.
- Spread marshmallow fluff over top.
- Sprinkle remaining cookie dough on top.
- Press down gently.
- Bake for 35 minutes, or until golden brown and cooked through.
Notes + Tips!
- Room temperature is about 70℉.
- 1 1/4 cups graham cracker crumbs = 8 graham cracker sheets
- Use an oven thermometer to ensure accurate cooking temperatures.
