Homemade Strawberry Toaster Strudel

Better than store-bought Homemade Strawberry Toaster Strudels! With just two ingredients – puff pastry and strawberry preserves – you can whip up these flaky pastries in no time. Finish each pastry with a drizzle of sweet vanilla icing to have a treat that’s roll-your-eyes-back delicious!

Over the past few weeks, we have shared a handful of some of our favorite nostalgic recipes like muddy buddies, strawberry fruit roll-ups, and french toast sticks. But our top requested recipe to share before the back-to-school rush ends? Well, it was unanimous…toaster strudels!

Personally, my mom and I loved the apple filled toaster strudels the most, but you all said strawberry was the best flavor. So, we whipped up a batch of strawberry jam and started testing!

These Homemade Toaster Strudels Are:

  • Filled to the brim with sweet strawberry jam.
  • Encased in flaky, buttery puff pastry just like our heart shaped hand pies.
  • Best enjoyed fresh out of the oven, while still a little warm and gooey.
  • A nostalgic treat that’s perfect to start your day.
  • Made from only two ingredients!

These homemade toaster strudels are just like the original, but SO MUCH better. You don’t get those extra tall, flaky, layers with store-bought. You mostly just get small, sad puff that’s just down-right messy.

Oh, and did I mention you get about twice the amount of filling + twice the size of the store-bought pastries with our homemade version?! 😉

Here’s What You Need:

  • Puff Pastry: You can either use store-bought puff pastry or make our homemade rough puff pastry that can be found on our blackberry turnover recipe!
  • Strawberry Jam: We almost always have homemade strawberry jam on hand during the summer months and this recipe was the perfect way to use the last of it! If you don’t have access to strawberries or don’t have the time to make jam, you can use your favorite store-bought jam/preserves instead.

Start With The Puff Pastry Dough

If you’re making your own rough puff, be sure to start early to ensure you have enough time to do the rest. I actually recommend making the dough the day before you’re ready to make these toaster strudels.

But for now, step 1 is to prep the dough. Whether using store-bought or homemade, here are the steps you need to take to get the pastries ready to be filled!

  1. Brush off any excess flour. Whether there’s a lot of flour or a minimal amount, getting rid of that excess flour is important!
  2. Cut into rectangles. If you’re using store-bought puff pastry, cut into 6 equal sized rectangles. If you’re using homemade, cut the rolled out dough into 3×4″ rectangles.
  3. Brush with egg wash. Place the cut dough onto prepared pans and brush the edges of each rectangle with egg wash (you can also use water or milk, if desired).

Repeat step 1 and 2 with the second sheet of puff pastry. Do not brush the edges of these with egg wash. This set of 6 will be the tops for our previous six. Brushing the edges of the second set of rectangles will make things more difficult when you go to assemble the pastries!

Spoon The Jam Into The Center

These toaster strudels have a total of TWO Tablespoons of jam in the center of each pastry. They are truly jam packed (😉). Remember to leave a ¼ inch border around the rectangle!

How To Assemble Toaster Strudels

We’re now ready to start putting the pastries together! Place the second set of rectangles, one at a time, on top of filled dough. Press gently to seal the edges, as seen below. Now, using a fork, press around the seams to seal, being careful not to press all the way through the dough.

Now, brush the tops of each pastry and place the ready-to-bake toaster strudels in the freezer. This helps the butter in the pastry dough to get cold again and allow the dough to firm up, since it has been out at room temperature for so long! Chill for 20 minutes while your oven preheats.

Once thoroughly chilled, place in the oven and bake until the pastry is puffed and rich, golden brown in color.

Toaster Strudel Icing

Is it really a toaster strudel without the icing? Honestly, the icing is so simple. It might be more of a glaze than an icing, but it IS delicious. Oh, and the best part? It’s only 3 ingredients!

You just need some powdered sugar, milk, and a splash of vanilla. I opted to use vanilla powder, as the flavor reminded me more of the packets from the box. It also keeps the frosting that perfect snow white color!

And just like that, you have delicious toaster strudels just waiting to be enjoyed!

FAQ’s

Theoretically, you can… but our puff pastry puffed waaaaay too much to fit into a toaster! If you have uniced, thinner toaster strudels, go ahead and pop them in the toaster!

One of my favorite things about this recipe is how versatile it is. Try swapping the strawberry jam for apple butter, raspberry jam, pumpkin butter, apple pie filling, ganache, or even cookie dough!

Homemade Strawberry Toaster Strudel

Ingredients
 

Pastries

Egg Wash

  • 1 large egg, room temperature
  • 1 Tablespoon water

Icing

  • ½ cup powdered sugar, sifted
  • teaspoons whole milk
  • ¼ teaspoon vanilla powder, optional

Instructions

  • Thaw puff pastry according to package directions.
  • While pastry is thawing, heat oven to 375℉/190℃.
  • Line 2 sheet pans with parchment paper. Set aside.
  • Working with one sheet of pastry at a time, unfold dough and smooth seams.
  • Cut into 6 equal rectangles.
  • Place rectangles on prepared sheet pan.
  • Spoon 2 Tablespoons jam in the center of each rectangle.
  • Spread evenly over dough, leaving a ½-inch border on all 4 sides.
  • Make egg wash by whisking egg and water together in a small bowl.
  • Using a small pastry brush, brush egg wash around the edges of the dough.
  • Unfold second sheet of dough and smooth seams.
  • Cut into 6 equal rectangles.
  • Place rectangles, one at a time, on top of filled dough.
  • Press gently to seal.
  • Using a fork, press around the seams to seal, being careful not to press all the way through the dough.
  • Brush tops of dough with egg wash.
  • Place in the freezer until cold, about 20-30 minutes.
  • Bake for 25 minutes, or until golden brown and cooked through.

Icing

  • In a small bowl, whisk powdered sugar, milk, and vanilla powder (if using) until smooth.
  • Drizzle over tops of pastries.

Notes + Tips!

How To Store:

  • For best results, enjoy your strawberry toaster strudels fresh from the oven.
  • If storing leftovers, place them in an airtight container and refrigerate for up to 2 days.
  • To reheat, warm them in a toaster oven or oven until heated through.
