Super simple M&M Sugar Cookies for Easter! This chewy cookie is ready with pantry staples, one bowl, pastel M&M’s, with no chilling needed! Enjoy them warm, right out of the oven, while still gooey and melty!

With Easter coming up, we’re keeping it simple with these delicious sugar cookies.  Seeing the pastel M&M’s at the store inspired us to make these cookies! They’re a fun and easy way to celebrate.

Key Ingredients For The Perfect Easter M&M Cookies

Similar to our Funfetti Cookies, this recipe uses just granulated sugar. It took a lot of recipe testing, tweaking, and adjusting ratios to get these cookies perfectly chewy without adding brown sugar. We don’t recommend making substitutions to this recipe, as each ingredient is carefully chosen and measured to craft a cookie that’s sweet, chewy, and delicious! Here is what you need:

  • Granulated Sugar – Provides sweetness, helps to create the perfect texture, and contributes to the browning of the cookies.
  • Salted Butter – Adds richness and flavor to the cookie dough and helps to create the proper texture. The salt in the butter enhances the flavor of the dough, and balances the sweetness.
  • Egg –  Acts as a binder, holding the ingredients of the cookie dough together, adds moisture and richness, and contributes to the structure.
  • Vanilla Extract – Adds a subtle undertone that enhances the flavor.
  • All-Purpose Flour – The protein content in all purpose flour gives the dough the structure it needs.
  • Baking Soda – Contributes to the rise and structure, and also helps these cookies spread.
  • Pastel Colored M&M’s – In addition to the fun pop of pastel colors (perfect for Easter!), they add a burst of chocolate flavor.

Mix Up The Dough

With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes. Beat in egg and vanilla. Add flour and soda. Mix just until combined. Fold in M&M’s.

Did I Mention No Chilling Time?

Yes! Unlike many cookie recipes, this recipe doesn’t need to be refrigerated before baking. Just portion dough onto your prepared pan and bake for 15-20 minutes! That’s it!

Mix-in Ideas

The great thing about these cookies is that they’re just sugar cookies! Which means…they will go with literally anything and everything! Here are a few of our favorite things to toss into a batch of these cookies.

  • Dark chocolate chips
  • Nuts of any kind
  • White chocolate chips
  • Mini marshmallows
  • Chopped candy bars

Recipe FAQ’s

Of course! Follow the recipe through step 8 and place portioned cookie dough on a lined sheet pan. Place in the freezer and freeze until solid. Once solid, place in a freezer-safe zip-top bag.

If you would like to keep these cookies from spreading as much, you can refrigerate the dough for 30 minutes – 1 hour before baking, and make sure you line your pan with parchment paper or a silicone sheet. (Spraying the pan with cooking spray or oiling the pan will cause the cookies to spread.) It’s best to portion the dough beforehand and then refrigerate.

The best way to achieve this is using a cookie scoop because the dough balls will already be in close-to-perfect rounds. As they bake, the cookies will spread into a perfect round shape! But, sometimes the cookies can get a little wonky-shaped while spreading. No worries! You can still fix it.

Using a round cookie cutter that’s larger than the cookie, bump the cookies while they’re still very hot to fit inside the cutter and circle around them to create the perfect round shape!

If the cookies are dry and/or crumbly, either they were over-baked or the flour was over-measured.

The best part about these cookies? They can be frozen for up to 3 months! Oh, yes, that’s right. After baking and cooling, you can place the baked cookies in an airtight freezer safe zip top bag and put in the freezer.

You can also keep these cookies in an airtight container or zip top bag on the counter for about 4-5 days!

Chewy Easter M&M Sugar Cookies

Easy to make, requires no refrigeration, and ready in less than an hour! These Chewy Easter M&M Sugar Cookies are the perfect treat to bake this Spring/Easter.
Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
Servings: 16

Ingredients
 

  • 1⅙ cups granulated sugar
  • cup salted butter, room temperature
  • 1 large egg, room temperature
  • teaspoons vanilla extract
  • cups all purpose flour*
  • ¾ teaspoon baking soda
  • 1 cup pastel M&M's

Instructions
 

  • Heat oven to 350℉.
  • Line sheet pan with parchment paper. Set aside.
  • With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes.
  • Beat in egg and vanilla.
  • Add flour and soda.
  • Mix just until combined.
  • Fold in M&M's.
  • Use a 3 Tablespoon cookie scoop to portion dough onto prepared pan.
  • Bake for 15-20 minutes, until edges are just starting to brown.
  • Allow to cool on pan.

Notes + Tips!

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
Tips For Sucess:
  • Make sure all of your ingredients are room temperature!
  • Room temperature is about 70℉.
  • Be careful to not over-mix the cookie dough!
  • Don’t forget to line your sheet pans.
  • It’s best to use a cookie scoop to ensure all cookies are the same size.
  • Use an oven thermometer to ensure accurate cooking temperatures.
  • The cookie dough can be frozen and baked at a later date!
