We’re excited for Fall and ready for cooler weather, pumpkin spice, and mugs of apple cider—not to mention a big scoop of apple crisp topped with cinnamon ice cream. To kick off the month, we’re sharing a cozy, delicious, and easy-to-make recipe: Cinnamon Roll Blondies. Imagine the flavor of classic bakery-style cinnamon rolls combined with the cake-like texture of the best cookie bars. These blondies are soft, chewy, and full of cinnamon flavor. Plus, they’re incredibly easy to make with just a mixing bowl, whisk, and pan. Simple to prepare, yet deliciously rich in flavor!

What’s The Difference Between a Blondie and Brownie?

Blondies are often referred to as “blonde brownies”, as they look very similar, and have similar ingredients, but in our testing, we found that brownies and blondies are really not that similar. In actuality, it’s almost more like a chocolate chip cookie!

Blondies are made with flour, eggs, melted butter, and lots of brown sugar! Our version does have the addition of pumpkin pie spice, rather than focusing on a strong vanilla flavor, like a traditional blondie.

Brownies are made with cocoa powder (and sometimes melted chocolate!), melted butter, eggs, and granulated sugar. To achieve the gorgeous crinkle-top crust for brownies, you need to beat the eggs and sugar.

With blondies, you shouldn’t beat any of the ingredients. In our testing, we found that beating the blondies caused them to be greasy and not bake properly.

For The Blondies

  • Salted Butter – Adds just the right amount of salt to these blondies, while also making them oh-so soft and chewy.
  • Brown Sugar – Not only does brown sugar add sweetness, but this is what makes these blondies so chewy and delicious!
  • Large Eggs – Eggs act as a binder, as well as adding richness.
  • Vanilla Extract – A splash of vanilla adds a delicious undertone to these blondies.
  • All-purpose Flour – No fancy flours needed for this recipe! All-purpose gives these bars the perfect structure.
  • Ground Cinnamon – Adds flavor.
  • Baking Powder – Gives these blondies just the right amount of rise, making them an irresistible texture.

For The Topping

  • Brown Sugar – We wanted to to keep the flavor of brown sugar going throughout these blondies. By using brown sugar on top instead of granulated, it creates a less crunchy, but more flavorful topping!
  • Ground Cinnamon – By mixing the brown sugar and cinnamon together, it gives these blondies a flavor reminiscent of cinnamon rolls.

For The Icing

  • Powdered Sugar – To make your icing! It is the only sugar you can use to do this.
  • Whole Milk – You can also use half and half, if you prefer a bit thicker icing!
  • Vanilla Extract – Adds a little bit of extra flavor to every bite.

How To Make Cinnamon Roll Blondies

Step 1: Make topping

In a small bowl, whisk sugar and cinnamon together. Set aside.

Step 2:Prepare batter

In a medium bowl, whisk together butter, sugar, eggs, and vanilla.

Add flour, cinnamon, and baking powder. Stir in dry ingredients.

Step 3: Bake

Pour batter into prepared pan. Sprinkle cinnamon sugar mixture evenly over the top. Bake for 35 minutes.

Step 4: Make icing

Combine all ingredients in a small bowl. Whisk until smooth.

Drizzle over cooled blondies.

How To Tell When Blondies Are Perfectly Baked

We found that with this recipe in particular, using a cake tester or tooth pick is the best way to tell when they’re perfectly baked. After inserting the cake tester, it should still be a little damp with maybe one or two crumbs on it.

This means that the blondies are still moist and just baked!

How To Store

Once these blondies have cooled, you can store them in an airtight container or zip top bag at room temperature for about 1 day (they are very moist!). You can refrigerate them for about 3-5 days. Though, in our opinion, the best way to store these blondies is in the freezer! Place the blondies in a freezer safe zip top bag and freeze for up to 3 months.

Ingredients
 

Blondies

  • ¾ cup salted butter, melted
  • cups brown sugar, firmly packed
  • 3 large eggs, room temperature
  • 1 Tablespoon vanilla extract
  • cups all purpose flour
  • 1 teaspoon ground cinnamon
  • 1⅛ teaspoons baking powder

Topping

Icing

  • ½ cup powdered sugar
  • teaspoon whole milk
  • ¼ teaspoon vanilla

Instructions
 

Topping

  • In a small bowl, whisk sugar and cinnamon together. Set aside.

Blondies

  • Heat oven to 350℉/177℃.
  • Spray 9-inch square pan with baking spray. Set aside.
  • In a medium bowl, whisk together butter, sugar, eggs, and vanilla.
  • Add flour, cinnamon, and baking powder.
  • Stir in dry ingredients.
  • Pour into prepared pan.
  • Sprinkle cinnamon sugar mixture evenly over the top.
  • Bake for 35 minutes.

Icing

  • Combine all ingredients in a small bowl.
  • Whisk until smooth.
  • Drizzle over cooled blondies.

Notes + Tips!

Tips For The Best Blondies
  • When mixing in the dry ingredients, be sure not to over-mix the batter!
  • Bake times may vary depending on your oven. Use a cake tester to see when these blondies are baked!
  • The icing is optional, but highly recommended!
  • These blondies are VERY moist and keep best in the fridge or freezer.
