Layers upon layers of deliciousness! That’s the perfect way to describe this decadent apple crumble cheesecake. A buttery graham cracker crust, cinnamon spiced cheesecake, homemade apple pie filling, MORE spiced cheesecake, and finally a crunchy brown sugar oat crumble. It’s the perfect Fall/Thanksgiving dessert!

Ever since we made our apple cranberry crumble pie, I’ve been trying to think of a new apple pie + crumble combo.

And, if you know me, you know I love when two desserts come together to make something extra special. Coffee cake cookies, pecan pie upside down cake, creme brulee tart (or creme brulee cupcakes!), tiramisu cheesecake…just to name a few!

Though, this one might just take the cake. It’s everything you love about a rich, decadent baked cheesecake combined with the warming, comforting flavors of apple pie. YUM!!!

5 Layers of Deliciousness

Like I said above, there are a lot of steps and a lot of layers…but each one makes this cheesecake simply irresistible! Let’s go over the layers:

  1. Graham Cracker Crust: You only need 3 ingredients and one bowl to mix up this super simple crust. If you want to give it an extra depth of flavor, try browning the butter!
  2. Spiced Cheesecake: A rich and creamy cheesecake filling with a hint of apple pie spices that complement the apples perfectly.
  3. Apple Pie Filling: Tender, spiced apples cooked until soft and sweet, creating the perfect fall-inspired filling.
  4. MORE CHEESECAKE: Because there’s no such thing as too much cheesecake.
  5. Oat Crumble: A crunchy, buttery crumble made with oats, brown sugar, and just a bit of apple pie spice.

All of this flavor and texture packed into one dessert? YOU BETCHA! Creamy, crunchy, crumbly, and so yummy.

Start With The Graham Cracker Crust

The recipe begins with this graham cracker crust. It’s just 3 simple ingredients: graham crackers, granulated sugar, and melted butter.

The best part? You just need one bowl to make it! Simply dump the graham cracker crumbs and sugar in a bowl, give it a good mix, and just stir in the melted butter.

Be sure to line the bottom of your springform pan with a sheet of parchment paper before adding the crust! We recommend using a tart tamper to help get the crust nice and packed.

Grab These Ingredients For The Cheesecake & Filling

  • Cream Cheese: You will need 24 ounces (681g) of full-fat brick cream cheese. Be sure you’re buying the bricks of cream cheese and not tubs of cream cheese spread or low-fat cream cheese.
  • Granulated Sugar: You’ll love that this cheesecake isn’t overly sweet!
  • Spice & Vanilla: We use apple pie spice and a splash of vanilla for this cheesecake to give every bite an incredible depth of flavor.
  • Eggs: A main ingredient in any baked cheesecake, to help it set up. Want an egg-free option? Try our no-bake gingerbread cheesecake instead.
  • Heavy Cream: This smooths out the filling and makes it taste extra creamy. You only need 2 Tablespoons, so feel free to use the rest of the carton to make some whipped cream to go on top!
  • Apple Pie Filling: The hidden surprise waiting in the center of every bite! Running low on time? Feel free to use store-bought apple pie filling!

Let’s Make The Apple Crumble Cheesecake!

In the printable recipe card below, we encourage you to make the pie filling before starting on the cheesecake batter. This will give the apples time to cool before assembling the cheesecake (if you already have apple pie filling, feel free to jump to the next step!).

Combine all apple pie filling ingredients in a sauté pan and cook until apples have softened, about 10 minutes. Set aside to cool.

Now, move onto the cheesecake batter. It’s relatively simple to make, especially if you have a stand mixer! Spoon half of the cheesecake batter into the pre-prepared crust, top with the apple pie filling, and then spoon the remaining cheesecake over the apple layer.

While the cheesecake is in the oven, we’re going to make the streusel (a little unconventional, I know! But trust me, this works.) A pastry cutter makes this step easy. You could also use two forks or your fingers to make the crumble. Refrigerate the crumble until the remaining time for your cheesecake is up.

After the first 30 minutes, carefully remove the cheesecake from the oven. Sprinkle the crumble over the top and return the cheesecake to the oven. Bake an additional 25-30 minutes, or until mostly set and crumble is browned.

The cheesecake filling may seem a little wobbly when it’s done, but i promise that it will finish setting up as it cools and chills!

Cooling, Chilling, & Serving Your Cheesecake

One of the most important steps to the perfect baked cheesecake is giving it time to COOL. Let the cheesecake cool at room temperature until completely cooled, about 1-2 hours; then transfer to the refrigerator to chill for at least 4 hours and up to 2 days.

Once you’re ready to serve, slowly release the lock on your springform, slide the cheesecake off the bottom of the pan (I like using a cake lifter for this!), and place on your serving plate.

Serve each slice with a scoop of vanilla ice cream, chantilly cream, or a drizzle of salted caramel sauce!

Apple Crumble Cheesecake

If a dessert could taste like fall, it would be this Apple Crumble Cheesecake! perfect fall dessert! It's decadent, rich layers create a dessert that's sure to be a crowd pleaser. Each bite is creamy, crunchy, perfectly balance between spiced and sweet, and full of flavor.

Cook Time: 1 hour
Refrigeration Time 12 hours
Total Time: 13 hours 45 minutes
Servings: 12 slices

Ingredients
 

Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • ¼ cup granulated sugar
  • teaspoon salt
  • 7 Tablespoons unsalted butter, melted

Apple Filling

  • 1 pound granny smith apples, peeled, cored, and chopped
  • ½ cup powdered sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoon apple pie spice
  • teaspoon salt
  • teaspoon vanilla extract
  • 1 Tablespoon unsalted butter

Cheesecake

  • 3 cups cream cheese, room temperature
  • cups granulated sugar
  • ½ teaspoon apple pie spice
  • ¼ teaspoon salt
  • 4 large eggs, room temperature
  • 6 Tablespoon heavy cream, room temperature
  • teaspoon vanilla extract

Crumble

  • 1 cup rolled oats
  • 3 Tablespoons brown sugar, firmly packed
  • 3 Tablespoons all purpose flour
  • teaspoon apple pie spice
  • 1/16 teaspoon salt
  • 6 Tablespoons unsalted butter, cubed

Instructions
 

Graham Cracker Crust

  • Heat oven to 325℉/163℃.
  • Mix graham cracker crumbs, sugar, and salt in a small bowl.
  • Stir in butter.
  • Immediately scrape into a 9-inch springform pan.
  • Press evenly across the bottom and up the sides.
  • Once distributed, pack well. Set aside.

Apple Filling

  • Combine all ingredients in a medium saucepan.
  • Cook and stir over medium/medium-low heat until apples just start to soften, about 10 minutes. Set aside.

Cheesecake

  • In a stand mixer fitted with the flat beater, beat cream cheese until smooth.
  • Add sugar, spice, and salt.
  • Beat until combined.
  • Add eggs, one at a time, beating well after each.
  • Stir in cream and vanilla.
  • Pour half of batter into prepared crust.
  • Spoon apple filling evenly over the top.
  • Top with other half of batter.
  • Bake for 30 minutes.
  • During this first bake, make streusel.

Streusel

  • Combine oats, brown sugar, flour, spice, and salt in a medium bowl.
  • Mix well.
  • Add butter.
  • Mix with a hand mixer until combined. (You can also use a pastry blender or your fingers.)

To Finish

  • Remove cheesecake from oven.
  • Spread streusel evenly over the top.
  • Return to oven and bake an additional 25-30 minutes, or until set.
  • Allow to cool completely at room temperature, about 1-2 hours.
  • Refrigerate at least 4 hours, but preferably overnight before serving.

Notes + Tips!

  1. Make Ahead & Freezing Instructions: This cheesecake can be made up to 2 days in advance. Store covered in the fridge until you’re ready to serve. You can also freeze the baked, cooled, and chilled cheesecake. Remember to thaw overnight in the refrigerator before serving. Note that the streusel topping may become very soft after freezing and thawing!
  2. A Note On Apples: For an extra depth of flavor, it’s best to  use a mix of sweet and tart apples. We love to mix Honeycrisp apples and Granny Smith apples.
  3. Room Temperature Ingredients: Bring all cold ingredients to room temperature (70℉/21℃). before getting started making this recipe. Room temperature ingredients will combine better, more quickly, and more evenly!
  4. A Few Things To Keep In Mind: 2 cups graham cracker crumbs = 16 whole graham crackers. | To substitute salted butter for the unsalted in the crust, omit the salt.
